
A few months I read a book called Veg by Hugh Fearnley-Whittingstall. It was a very interesting book and it has inspired me to make more salads. My husband Howard calls me a rabbit as I eat a lot of it. As summer is on the way I felt it was time for a sumptuous salad. Since reading this book I’ve learned you can make tasty dishes with very few ingredients. Of course I had to share my findings with you. Below is a video and recipe for you.

Equipment
- Saucepan
- Colander
- Tablespoon
- Teaspoon
- Serving bowl
- Salad spoon and fork
Ingredients
- Frozen green beans x 1 handful
- Frozen Edamame beans x 1 handful
- Frozen peas x 1 handful
- Olive oil x 1 – 2 tbsps
- Tamari x 1/2 – 1 tbsps
- Honey x 1 tsp
- Dried mixed herbs x 1 tsp
- Salt and pepper to taste
Method
- Put the large saucepan onto a high heat on the hob and add water to the pan.
- Bring the pan to the boil and add in the green beans, edamame beans and peas to the pan.
- Then bring the pan to the boil again.
- Once boiling turn the heat down and leave to simmer.
- Cook the beans and peas for about 3 – 5 minutes.
- Or alternatively cook as per the packet instructions.
- While the beans are cooking mix the ingredients for the salad dressing.
- In the small mixing bowl pour the olive oil, tamari, dried mixed herbs and salt and pepper to taste.
- Stir these ingredients together.
- When the vegetables are cooked pour the ingredients through a colander over the sink.
- Put the cooked vegetables into a serving bowl.
- Pour over the dressing when you are ready to serve.
- Then enjoy with your favourite dinners.

Green Beans and Pea Salad was a delicious way to enjoy these salads. It was a very easy to prepare and cook. It would be a great salad to cook and eat then store in the fridge overnight. The salad could be eaten with burgers, steak, chicken or even fish as well. I enjoy cooking quinoa and rice to enjoy with the salad as well.
