
To be honest, I try not to eat in between meals but occasionally I get a little hungry. Nowadays I try to eat high protein snacks. Chickpeas are a great source of protein and they are also high in fibre too. Roasting chickpeas can give them a little bit of crunch which can be a craving for me. Therefore this makes an ideal high protein, high fibre crunchy snack. I love it and I hope you will too. Below is a video and recipe for you.

Equipment
- Large bowl
- Colander
- Saucepan
- Teaspoon
- Small mixing bowl
- Baking tray
Ingredients
- Beans or chickpeas x as per the recipe
- Water x enough to cover the bean and then a couple inches
- Baking powder x 1 tsp
- Salt to your taste
- Olive oil x 2 tbsp
- Garlic granules x 1 tsp
- Onion granules x 1 tsp
- Mild chili powder x 1 tsp
- Smoked paprika x 1 tsp
- Cayenne pepper x 1/4 tsp
- Salt and pepper to taste
Method
- Preheat the oven to 200°C or gas mark 6.
- Measure the amount of beans or chickpeas you will need for your recipe.
- Put them into the large bowl, if you haven’t already then cover in enough water and then a couple of inches above.
- Soak the beans in the fridge overnight.
- You may want to use a bowl with a lid.
- The next day remove the beans from the fridge and pour any excess water through the colander.
- Rinse under the tap.
- Put the beans into the large saucepan.
- Again pour enough water to cover the beans plus a two inches above.
- Add in the baking powder and salt to your taste.
- Turn the hob onto high and bring to the boil.
- When the pan starts to boil turn the heat down to low.
- Leave to simmer until most of the water has disappeared.
- Then drain through the colander and rinse under the tap.
- Set these chickpeas to one side.
- Pour the olive into a small mixing bowl.
- Add in the garlic granules, onion granules, mild chili powder, smoked paprika, cayenne pepper and salt and pepper to taste.
- Mix these ingredients together.
- Put the chickpeas into the baking tray.
- Pour over the oil and toss these ingredients together.
- Place the baking tray into the oven.
- Bake the chickpeas for 25 – 30 minutes or until golden brown.
- Remove from the oven and leave to cool.
- Then serve and enjoy.

Roasted Southern Spice Chickpeas were so tasty. These make a delicious snack. They are easy to prepare and cook. They can be eaten on there own or you could add them to soups, stews and curries too.
