Carrot and Apple Salad with Tahini and Orange Dressing

Carrot and apple quite often make a delicious combination. That’s why I have decided to throw these two ingredients together in a salad. For this recipe I wanted a tangy but creamy dressing to compliment to sweetness of the apple and the peppery taste of the rocket. I find mayonnaise a bit to heavy. Therefore I decided tahini would be a better option. The result were so yummy that I had to share the recipe with you. Below is a video and recipe for you.

Ingredients for the salad

  • Carrots x 2 large
  • Apples x 2 large
  • Rocket x 2 large handfuls

Method for the salad

  • Peel and grate the carrots.
  • Put the grated carrots in the salad bowl.
  • Next slice the apple in half and then into quarters.
  • Remove the core by slicing at a right angle underneath the core on both sides.
  • Grate the flesh and skin of the apple.
    • You can peel the apple if you want to but I love the skin.
  • Put the apple into the bowl with the carrot and add in the rocket.
  • Mix these ingredients together and set to one side.

Ingredients for the dressing

  • Olive oil x 2 tbsps
  • Tahini x 1 tbsp
  • Orange juice x 1 tbsp
  • Salt and pepper to taste

Method for the salad

  • Pour the oil, tahini and orange juice into a bowl.
  • Add salt and pepper to taste.
  • Mix these ingredients together.
  • When ready to serve grab the salad and pour over the dressing.
  • Toss all of these ingredients together.
  • Then serve and enjoy.

Carrot and Apple Salad with Tahini and Orange Dressing was delicious. It was easy to prepare and serve. Personally this salad would be best served immediately after preparation. I find that apple tends to go bad very quickly. If you don’t mind brown apple pieces then you could make this recipe the day before and add the dressing when you want to serve it.
