
Last month I made savoury salads with fruit in. These were so yummy that I wanted to make more fruit dishes. This lead me to thinking about roasted fruit. Pineapple is sweet but versatile. Also, as I discovered, it roasts really well too. It can be eaten with a variety of different dishes as well. Plus it can be eaten hot or cold. Also it accompanies fish, chicken or pork well and it tastes great with ice cream, cream or coconut cream and maple syrup too. We loved it and we hope you will too. Below is video and recipe for you.

Equipment
- Baking tray
- Sharp knife
- Chopping board
- Tablespoon
- Teaspoon
Ingredients
- Pineapple
- Coconut sugar x 2 tbsps
- Coconut oil x 2 tbsps
- Ground sweet cinnamon x 1 – 2 tsps
Method
- Preheat the oven to 180°C or gas mark 5.
- Place a baking tray into the oven at the same time.
- Next prepare the pineapple.
- Place the pineapple on it’s side and cut the top and the bottom from the pineapple.
- To remove the skin slice downwards, along the curve of the pineapple.
- Cut deeply enough to remove the eyes.
- Now slice down the centre of the pineapple.
- Cut the two halves into quarters.
- Next remove the core by slicing the hard piece of pineapple at the tip of the quarter.
- Continue to do this to the other three quarters.
- Then slice the quarter length ways in half.
- Once the oven has preheated remove the baking tray.
- Add the coconut oil and sugar to the base of the tray.
- Sprinkle in the ground sweet cinnamon and mix everything together.
- When the sugar and sweet cinnamon dissolves into the oil add in the pineapple.
- Toss these ingredients together.
- Place the baking tray back into the oven and bake for 25 – 30 minutes of until the pineapple is golden brown.
- Remove from the oven and leave to cool.
- Then serve with ice cream, coconut cream and maple syrup or as part of a savoury dish like pork.
- Finally enjoy.

Roasted Pineapple was delicious. We ate it with coconut cream and maple syrup. It was so yummy. All the ingredients in this dish are freezable. Therefore you could freeze this dish and eat it on another occasion. As I mentioned earlier it’s delicious hot or cold or as a savoury or sweet dish too.
