
Normally I would just eat a piece of fruit. The other day I made salads with fruit in. It made me think about roasting fruit and how it would taste after it had been roasted. I decided to give it a try. Peaches were an obvious choice of fruit to roasted. They are solid like apples which makes them a good contender for the oven. The fruit roasted well and the peaches were so good. Of course I had to share the recipe with you. Below is a video and recipe for you.

Equipment
- Sharp knife
- Chopping board
- Baking tray
- Tablespoon
- Small mixing bowl
Ingredients
- Peaches x 4 ripe
- Coconut oil x 2 tbsps
- Maple syrup x 2 tbsps
- Coconut cream x 100mls
- Maple syrup x 20mls
Method
- Preheat the oven to 180°C or gas mark 4.
- Put a baking tray in at the same time.
- Slice the peaches in half and remove the stones.
- When the oven has preheated remove the baking tray.
- Add in the coconut oil and maple syrup.
- Let it melt down in the hot tray stirring it.
- Try to spread the melted oil and syrup as evenly as you can across the base.
- Lay the peaches face down on the tray.
- Gently press and rub them against the mixture.
- Once all the peaches are in the tray put it back into the oven.
- Bake for about 25 – 30 minutes or until the peach skins have shriveled.
- Remove from the oven and leave to cool for a little while.
- Meanwhile add the coconut cream to a small mixing bowl.
- Add in the 20mls of maple syrup and mix these ingredients together.
- Then place a couple of cooked peach halves onto a plate.
- Serve with the coconut cream and maple syrup.
- Then enjoy.

Roasted Peaches and Cream were a delicious way to enjoy fruit. It was easy to prepare and cook. The peaches can be frozen and eaten on another occasion. However I think useless you want to use these in a smoothie or in ice cream, the peaches are best when straight from the oven.
