Roasted Strawberry Ice Cream

During the summer months I enjoy making a variety of different flavoured ice creams. Strawberry has always been a favourite of mine. I loved strawberry ice cream when I was a kid. Nowadays when I make homemade ice cream I like to make it with fresh fruit. It makes a tasty alternative to shop brought ice cream. Plus this roasted strawberries ice cream is so much better than the ice cream I ate as a kid. We love it and we hope you will too. Below is a video and recipe for you.

Equipment

  • Pairing knife (small)
  • Chopping board
  • Baking tray
  • Tablespoon
  • Teaspoon
  • Small mixing bowl
  • Stirring spoon

Ingredients

  • Strawberries x 500g
  • Coconut oil x 2 tbsp
  • Maple syrup x 2 tbsp
  • Ground sweet cinnamon x 1 – 2 tsp
  • Vanilla extract x 1 – 2 tsp
  • Coconut cream x 40 – 80mls

Method

  • Preheat the oven to 200°C or gas mark 6.
  • Put the baking tray in while the oven preheats.
  • Start by hulling the strawberries.
  • To hull a strawberry, insert a small knife into the top of a strawberry near the green leaves.
  • Using the knife, cut around the outside and back to the start.
  • Pull on the green leaves which will take out that part of the strawberry and the stem inside.
  • Repeat the process until all the strawberries are hulled.
  • Once the oven has preheated remove the baking tray.
  • Put the coconut oil and maple syrup into baking tray.
  • Let these melt down and mix them together.
  • Once they the oil and sugar are mix together add in the cinnamon and vanilla.
  • Put the strawberries in and toss all of these ingredients together.
  • Place the baking tray into the oven and bake the strawberries for 25 – 30 minutes or until the start to turn golden brown.
  • Remove from the oven and leave to cool.
  • Then place the cooked strawberries onto the sheet tray.
  • Put the sheet tray into the freeze for at least 6 hours or preferably overnight.
  • Remove the tray 10 minutes before you want to make the ice cream.
  • Place the strawberries into the blender with about 40 – 80mls of coconut cream.
  • Blend these ingredients together until the strawberries are smooth.
  • Scoop the ice cream from the blender into bowls and add toppings of your choice.
  • Then serve and enjoy.
