Roasted Pineapple Ice Cream

When summer is here we tend to eat a lot more cold foods. For me, warm foods are for winter and cold foods are for summer. In summer I enjoy making my own ice cream with fresh fruit. When I made the roasted pineapple earlier this month I had leftovers so I decided to turn it into ice cream. The flavour of the roasted pineapple was very sweet and it made a tasty treat we all enjoyed. We hope you will too. Below is a video and recipe for you.

Equipment

  • Baking tray
  • Sharp knife
  • Chopping board
  • Tablespoon
  • Teaspoon

Ingredients

  • Pineapple x 1
  • Coconut sugar x 2 tbsps
  • Coconut oil x 2 tbsps
  • Ground sweet cinnamon x 1 – 2 tsps
  • Coconut cream x 2 tbsp

Method

  • Preheat the oven to 180°C or gas mark 5.
  • Place a baking tray into the oven at the same time.
  • Next prepare the pineapple.
  • Place the pineapple on it’s side and cut the top and the bottom from the pineapple.
  • To remove the skin slice downwards, along the curve of the pineapple.
  • Cut deeply enough to remove the eyes.
  • Now slice down the centre of the pineapple.
  • Cut the two halves into quarters.
  • Next remove the core by slicing the hard piece of pineapple at the tip of the quarter.
  • Continue to do this to the other three quarters.
  • Then slice the quarter length ways in half.
  • Once the oven has preheated remove the baking tray.
  • Add the coconut oil and sugar to the base of the tray.
  • Sprinkle in the ground sweet cinnamon and mix everything together.
  • When the sugar and sweet cinnamon dissolves into the oil add in the pineapple.
  • Toss these ingredients together.
  • Place the baking tray back into the oven and bake for 25 – 30 minutes of until the pineapple is golden brown.
  • Remove from the oven and leave to cool.
  • Then place the cooked pineapple onto the sheet tray.
  • Put the sheet tray into the freeze for at least 6 hours or preferably overnight.
  • Remove the tray 10 minutes before you want to make the ice cream.
  • Place the pineapple into the blender with about 40 – 80mls of coconut cream.
  • Blend these ingredients together until the pineapple are smooth.
  • Scoop the ice cream from the blender into bowls and add toppings of your choice.
  • Finally enjoy.

Roasted Pineapple Ice Cream was so yummy. It was easy to prepare and cook. However it was slightly time consuming but the efforts were worth the results. It was a yummy dessert. You could freeze the ice cream if you have any leftovers. Be aware that it will have more ice in it. Personally I think this dish is best served fresh.
