
Peaches are such an underrated fruit. Everyone always loves an apple but I feel people tend to forget about peaches. Many years ago when I lived at home my dad would do the shopping and he would buy peaches. I used to love to bit into them and let the juice run down my chin.
Nowadays I love to experiment with a variety of foods. Therefore I decided to roast peaches and then I had leftovers. So I pop them into the freezer and blended them with coconut cream. It was so yummy and a perfect sweet treat for a warm summer’s day. Below is a video and recipe for you.

Equipment
- Baking tray
- Sharp knife
- Chopping board
- Tablespoon
- Teaspoon
Ingredients
- Peaches x 4 ripe
- Coconut sugar x 2 tbsps
- Coconut oil x 2 tbsps
- Ground sweet cinnamon x 1 – 2 tsps
- Coconut cream x 2 tbsp
Method
- Preheat the oven to 180°C or gas mark 4.
- Put a baking tray in at the same time.
- Slice the peaches in half and remove the stones.
- When the oven has preheated remove the baking tray.
- Add in the coconut oil and maple syrup.
- Let it melt down in the hot tray stirring it.
- Try to spread the melted oil and syrup as evenly as you can across the base.
- Lay the peaches face down on the tray.
- Gently press and rub them against the mixture.
- Once all the peaches are in the tray put it back into the oven.
- Bake for about 25 – 30 minutes or until the peach skins have shriveled.
- Remove from the oven and leave to cool completely.
- Then place the cooked peaches onto the sheet tray.
- Put the sheet tray into the freeze for at least 6 hours or preferably overnight.
- Remove the tray 10 minutes before you want to make the ice cream.
- Place the peaches into the blender with the coconut cream.
- Blend these ingredients together until the pineapple are smooth.
- Scoop the ice cream from the blender into bowls and add toppings of your choice.
- Finally enjoy.

Roasted Peaches Ice Cream was so tasty. It was slightly time consuming to prepare but the efforts were worth the result. It was so tasty. It made a really delicious dessert after our dinner.
