
Citrus fruit are a staple on our shopping list. I tend to eat lemon and limes on a daily basis. In recent years I started fermenting foods. The other day I decided to ferment the lemons and limes that I buy regularly. I wanted to see if they tasted different from normal citrus fruit. Many years ago at this time of year we would have harvested our food and started fermenting it for Winter. I love this style of storing food. We live in the UK so we can’t grow our own lemons nor limes. I can however ferment the shop brought ones instead. Once mixed in with foods, like salads, stews, chilis, they didn’t taste much different. I guess I will be storing citrus fruit like this in the future too.

Equipment
- Sharp knife
- Chopping board
- Airtight glass jar
- Muslin cloth
- Rubber band or string
Ingredients
- Lemons and Limes x 5 – 10 (depending on the size of your jar)
- Water x enough to cover the lemons and lime in the jar
- Salt x 1 – 2 tbsp (depending on how many lemons you’ve used and how much water)
Method
- Slice the tops of the lemons and lime with a cross.
- Place the lemons and limes into the glass jar.
- Pour over enough water to cover the lemons and limes.
- Add in the salt.
- Place the muslin cloth over the top of the jar and attach with an elastic band or piece of string.
- Put the jar in a warm, dark spot in the kitchen or in the airing cupboard.
- Leave for at least 5 days.
- After 5 days or so remove the cloth.
- If there is mold on the top remove it and put the lid on.
- Store the glass jar in the fridge.
- Now use the lemons in your favourite recipes.
- Then enjoy.

Fermented Lemons and Limes were a great. The recipe was easy to prepare and store. As I mentioned earlier the lemons and limes tasted great with foods like salad, stews and chilis. These will keep in the fridge forever. Also don’t throw the water out. It is drinkable and it has loads of great gut bacteria too.
