
This spicy pea, lime and mint soup is the ultimate flavour wake up call! Sweet pea meets refreshing mint with a squeeze of lime for for brightness and just the right kick of chili to warm things up. It’s vibrant, dairy free and ready in minutes. Plus it’s perfect for lunch, to meal preap or even as a fancy dinner starter. Trust me, you’ll never look at peas the same way again.

Ingredients
- Frozen peas x 200g
- Onion x 1
- Garlic x 2 cloves
- Mild or hot chili powder x 1 tsp
- Cannellini beans x 1 400g tin
- Chicken stock x 500 – 600mls
- Lime x 1 (juice)
- Salt and pepper to taste
Method
- Peel, slice and dice the onion.
- Next peel and slice the garlic.
- Set these ingredients aside.
- Put the small pan onto a high heat on the hob and add hot water to the base.
- Add in the peas and bring it to the boil.
- Turn the down down to medium and leave to simmer for 3 – 5 minutes.
- Now put a frying pan onto a high heat on the hob and add oil to the base.
- When the pan is hot add in the onion and fry until it starts to soften.
- Next add in the garlic and fry until it starts to colour slightly.
- Sprinkle over the mild chili powder and mix into the other ingredients.
- Set to one side.
- Drain the peas through the colander over the sink.
- Open the tin of beans and drain through the colander over the sink.
- Pour the beans, peas, onions, garlic, mild or hot chili powder and chicken stock into the blender.
- Blend until these ingredients are smooth.
- Pour back in the saucepan and heat through.
- Then serve and enjoy.
