Cajun Sun Dried Tomato and White Bean Dip

Equipment

  • Tin opener
  • Colander
  • Sharp knife
  • Chopping board
  • Juicer or Fork
  • Blender
  • Teaspoon

Ingredients

  • Cannellini beans or a white bean of your choice x 1 tin
  • Lime x 1 (juice and zest)
  • Sun dried tomatoes x 60g
  • Cajun spice x 1 teaspoon
  • Olive oil x 40 mls
  • Salt and pepper

Method

  • Open the tin of white beans and drain the excess water through a colander over the sink.
  • Put the beans into the blender.
  • Zest the lime and put the zest into the blender
  • Slice the lime in half and squeeze the juice into the blender.
  • Add in the Cajun spice, sun dried tomatoes, olive oil and salt and pepper to taste.
  • Blend these ingredients together until smooth.
    • You may need to add a little water to the mixture.
  • Serve with vegetables or a condiment of your choice.
  • Then enjoy.
