
Welcome to another day in our 24 Days of Christmas celebration! Today, we’re giving a humble winter vegetable its moment to shine with these Roasted Rosemary and Garlic Parsnips. Crispy on the outside, tender on the inside, and infused with festive herbs, this dish brings a cosy, comforting warmth to your holiday table. It’s the perfect side to pair with your Christmas mains or to enjoy on its own as a little seasonal treat. Let’s bring some golden holiday magic to your plate! Below is a video and recipe for you. Equipment needed
- Sharp knife
- Chopping board
- Potato peeler
- Roasting tray
- Tablespoon
- Plastic brush
Ingredients
- Parsnips x 2 large
- Olive oil x 20 – 30mls
- Rosemary x 3 – 4 sprigs
- Garlic granules x 1 tsp
- Salt x 1 pinch
Method
- Cut the tops and bottoms from the parsnips.
- Then peel and cut the tops the vegetables
- Put a large pan of cold water onto a high heat on the hob.
- Place the parsnips into the water and bring to the boil.
- Turn the heat down to a medium heat and leave to simmer for 5 minutes.
- Once the parsnips are fork fall remove from the heat and drain through a colander.
- Leave to cool completely and store in a bowl or tupperware box.
- Store in the fridge overnight.
- Preheat the oven to 180°C and put in the baking tray.
- Pull the rosemary leafs from the stalks by pulling downwards on the rosemary.
- Chop the leafs into small pieces.
- Pour olive oil into the small mixing bowl and add in the chopped rosemary and garlic.
- Mix these ingredients together.
- Once the oven had preheated remove the baking tray and add in the oil.
- Then add in the parsnips.
- Toss the vegetables in the baking tray and then brush over the oil to make sure they are evenly coated.
- Put in the oven for 25 – 30 minutes depending on your oven or until the parsnips are a lovely golden brown colour.
- Once cooked serve with a roast dinner and enjoy.
