
There’s something quietly magical about a salad that’s both warming and fresh. This Warm Ginger and Rose Mediterranean Salad is a celebration of contrast. Equipment
- Small mixing bowl
- Teaspoon
- Sharp knife
- Chopping board
- Vegetable peeler
- Baking tray
Ingredients
- Olive oil 20 – 30 mls
- Rose essence x 1 – 2 tsps
- Ground ginger x 1 – 2 tsps
- Salt and pepper to taste
- Onion x 1
- Aubergine x 1
- Courgette x 1
- Chickpeas x 1 – 2 tins
- Cherry tomatoes x 2 handfuls
Method
- Preheat the oven to 200°C or gas mark 6.
- In the small mixing bowl add the olive oil, rose essence, ground ginger and salt and pepper to taste.
- Mix these ingredients together and set to one side.
- Peel, slice and dice the aubergine and courgette.
- Peel and slice the onion and set these ingredients to one side.
- Slice the cherry tomatoes and set aside.
- Drain the chickpeas through a colander and set to one side.
- Next grab your baking tray and put all the vegetables into the tray.
- Pour over the oil mixture and toss the vegetables in the oil.
- When the oven is preheated put the tray into the oven and bake for 25 – 30 minutes or until the vegetable are a lovely golden brown colour.
- Then serve with meat or fish.
- Then enjoy.
