Pasta is one of our favourite meals in the Knibbs household. We love a spaghetti bolognese but we also like to try new meals too. As if you haven’t guessed already. Now the sunshine has suddenly appeared I love making pasta as an evening meal. We eat brown rice pasta as I have a slight intolerance to gluten so find brown rice easier to digest.
In moderation, like all foods, brown rice can be a very nutritious gluten free carbohydrate and a healthy choice overall. Refined carbohydrates like white rice or pasta are fake foods that do not promote the health of the body. These carbohydrates strip the body of nutrients leaving pretty much nothing but they enter the bloodstream like an injection of sugar.
Brown rice on the other hand is loaded with vitamins and minerals as well as fibre and protein. Scientific studies have even shown that brown rice nutritious can reduce the risk of developing diabetes as well as heart problems. It’s also a safe choice for anyone following a gluten free diet.
We buy our brown rice pasta online but certain supermarkets in the UK are also selling it too. The three meals below are quick, simple and easy. Plus, they are delicious hot or cold so you can have these as a warm evening meal or a cold lunch. All of them are well worth a try.
Pesto, I think, is one of the best ways to eat pasta. We have this meal on a cold winter’s night or a sunny day at lunch time. The pine nuts give this meal a little bit of crunch and the lemon and basil add freshness and flavour to the dish. It’s delicious hot or cold and it’s a quick meal the whole family can eat.
Bacon Pasta, is one dish that will get my little family to the table. The bacon in this dish adds saltiness and the tomatoes add the sweetness. The combination of bacon and tomato, I think, is delicious and this pasta recipe does not disappoint. Bacon pasta is another meal the family will run to the table to eat.
Seafood Pesto and Pasta, my son loves fish so this is one of his favourites. I always add prawns to the meal as Ted really enjoys eating prawns. All the ingredients in this dish really complement each other. They are strong flavours that work well together and if your family love fish as much as mine do they won’t be disappointed by this meal.
All of the ingredients in these pasta dishes can be frozen. So you could make the sauces at the weekend and defrost during the week for a really simple evening meal. Also you could make extra of the sauce and freeze it for another meal later on. All frozen foods will keep for up to six weeks in the freezer. If you are using brown rice pasta don’t freeze the pasta as it’s made from rice it could leave you feeling sick. However you decide to eat this dish, as always, enjoy.
