My Dad loved his filthy food and sausages were one of his favourites. He really enjoyed sausage and mash or sausage and chips. My Dad was also very partial to a sausage roll too. As a child I remember him making these at Christmas as a tea time treat. Dad would always make his own pastry and he would cook them on Christmas Eve for tea the next day. I think, he would leave a homemade sausage roll and mince pie for Father Christmas to enjoy.
Although, in my memory, we ate these delicious sausage rolls at Christmas, they can be enjoyed at anytime of the year. We have these as part of a packed lunch to take to the park. Plus they also make a great dinner with chips and my homemade baked beans. The recipe below has been adapted slightly as I can no longer eat gluten I now use wholemeal spelt flour to make the pastry. Wholemeal spelt flour makes a great pastry and for me it tastes much better than white flour. So by adding the spelt flour I feel I have made these sausage rolls even more tasty. Well worth a try.
- Large mixing bowl
- Sharp knife
- Chopping board
- Plastic brush
- Baking tray
- Wholemeal spelt flour x 200g plus extra for dusting
- Salt x 1/4tsp
- Butter x 100g
- Egg x 1
- Lemon juice x 1tsp
- Oat milk x 4 tbsp (or a milk of your choice)
- Gluten free sausages x 6
- Mix the flour and salt together in the bowl.
- Cut the butter into cubes and add half of it to the flour.
- Rub the butter into the flour until it resembles coarse breadcrumbs.
- Add the rest of the butter and mix until it’s the size of small peas.
- Now make a well in the centre of the bowl.
- Next add the lemon juice.
- Beat the egg.
- Pour the egg into the well a little at a time, using a knife as you go.
- If the mixture looks like it has enough liquid to form a ball, don’t add the milk.
- If it doesn’t then add the milk a little at a time until it forms a dough ball.
- Put the dough onto a floured board.
- Knead it until it is smooth.
- Shape into a ball, wrap in clingfilm and refrigerate for 30 minutes before using.
- After 30 minutes remove from the fridge and flour the board again.
- Preheat the oven to 180°C.
- Roll the pastry out until it is thin.
- Then cut rectangles from the pastry (enough to roll around the sausage and stick together at the end)
- Stick the pastry together with a little milk using a plastic brush.
- Once you have cut one rectangle repeat the process for the rest of the sausages.
- Place the sausages onto the baking tray and cooking for 25 – 30 minutes.
- When the pastry has browned, remove from the oven.
- Leave to cool.
- Finally serve and enjoy.
Sausage rolls are a great lunchtime snack or can be made as part of an evening meal. My husband and son love sausage rolls and these are a favourite in this house. The pastry around the outside of the sausage will also soak up the fat from the sausage. It makes the pastry really sweet which is yum. Any leftover pastry can also be frozen and used on another occasion. We don’t just eat these at Christmas because they are too good to resist until then.
