Lavender and Honey Salad Dressing

My dear old Dad never understood why people bought dressing from the supermarket. He always used to say that it only takes 2 minutes to make a delicious dressing for salad. I have to say that on this one I agree.

A lot of the shop bought salad dressings have additives to help preserve them and keep them on the shelf longer. When making a homemade dressing you can make as much or as little as you like and you will still have a great tasting recipe. Plus I love to experiment and try new ideas.

So when I started Lavender month I decided to try lavender in a homemade salad dressing and the results were amazing. The lavender gave the dressing a sweet, flowery flavour that was subtle when mixed in with the green leaf salad. It’s a great way to add extra flavour to a salad and well worth a try.

Serves 4

Lavender and Honey Salad Dressing

Equipment

  • Measuring jug
  • Teaspoon
  • Sharp knife
  • Chopping board
  • Empty glass jar with lid

Ingredients

  • Olive oil x 80mls
  • Apple Cider vinegar x 40mls
  • Honey x 2 tsp
  • Garlic Granules x 2 tsp
  • Lavender a 3 – 4 stalks
  • Salt and pepper to taste

Method

  • Start by measuring the olive oil and apple cider vinegar in the jug.
  • Pour them into the glass jar.
  • Add in the honey and the garlic granules.
  • Chop the lavender into small pieces.
  • Now add the lavender to the jar.
  • Next add salt and pepper to taste.
  • Put the lid on and shake until all the ingredients are mixed together.
  • Pour over a green leaf salad or a salad of your choice and serve.

Lavender and Honey Salad Dressing was a simple way to dress the salad I was making for dinner. It made a beautiful change to add lavender to the salad I was dressing. The dressing will keep in a cool dark cupboard for quite a few weeks due to the apple cider vinegar. Plus using a clean empty glass jar is a great way to reuse and recycle.
