Pork and Pesto Burgers

Burgers and chips are one of my son Ted’s absolute favourite meals. Well that and pizza. He will normally ask me what’s for dinner every day. Even though I write it on the blackboard in the kitchen, he will still always ask. When I say burgers I normally get a big cheer as Ted loves them. Although like many children his age, Ted is not so keen on greens or vegetables. I am constantly informing Ted of the health benefits of veggies.

Occasionally he will surprise me and try a vegetable or two but it’s a challenge. Instead of the constant debating at the dinner table I will often find myself hiding the vegetables in the food. Burgers and meatballs are great for disguising the taste of any foods that might be green and lean. My homemade pesto is normally green, so Ted will automatically tell me he doesn’t like it. So instead of handing my child a plate of green food I have discovered ways to hide the greens. These pesto burgers are brilliant for camouflaging the colour and they taste so good no fussy kids can resist.

Method

  • Large mixing bowl x 1
  • Sharp knife
  • Chopping board
  • Vegetable peeler
  • Grater
  • Tablespoon
  • Baking tray

Ingredients

  • Sausage meat or mince pork x 500g
  • Onion x 1
  • Carrot x 1
  • Ground flaxseed or breadcrumbs x 4 tbsps
  • Pesto x 4
  • Salt and pepper to taste
  • Cashew nut cream cheese or sliced cheese to your taste
  • Oil for the baking tray

Method

  • Preheat the oven to 180°C or gas mark 4.
  • Cut the top and bottom from the onion and peel the skin off.
  • Slice and dice the onion and put this into the mixing bowl.
  • Peel the carrot and grate it into the mixing bowl.
  • Add in the sausage meat or mince pork, flaxseed, pesto and salt and pepper to taste.
  • Scrunch all the ingredients together using your hands.
  • Once everything is well mixed together, divide the pork mixture into four parts.
  • Then shape into burgers.
  • Grease the baking tray, if you haven’t already, with an oil of your choice.
  • Put the burgers into the oven for 25 – 30 minutes.
  • Plus cook the sweet potato chips at this point too.
  • To check the pork burgers are cooked, put a skewer into a burger and if the juice runs clear it’s cooked.
  • Now add cashew nut cream cheese or sliced cheese to the top of the burger and cook for a further 5 minutes.
  • When the cheese has melted slightly, remove from the oven and serve with the chips and a salad or beans.

Pork and Pesto Burger were a big hit in our house. The only small complaint is that Ted wanted his burger in a bun. Ted is now under the impression that burgers must come in buns. I am pleased to inform you that even though there wasn’t a bun, Ted, my husband Howard and I ate the lot. These burgers are great to make when the mince is raw. Then just freeze them for another occasion. They could make a very quick mid week or weekend meal. However you decide to eat this meal, as always, please enjoy. Thank you xxx
