
My husband, son and I are starting to enjoy bolder flavours in our easy homemade meals. This chicken kebab recipe brings together a perfect blend of warming spices, tender marinated chicken, and that irresistible smoky finish. Which were all made right in my own kitchen. Whether you’re cooking for a quick weeknight dinner or firing up the grill for friends and family, this recipe delivers juicy, flavour-packed kebabs every time with minimal effort and maximum taste.

Equipment
- Vegetable peeler
- Grater
- Large mixing bowl
- Small mixing bowl
- Teaspoon
- Tablespoon
- Grease proof paper x 4 sheets
- Baking tray
Ingredients
- Chicken mince x 500g
- Carrot x 1
- Smoked paprika x 1 tsp
- Mild or hot chili powder x 1 tsp
- Ground cumin x 2 tsps
- Ground coriander x 2 tsp
- Garlic powder x 2 tsp
- Onion powder x 2 tsp
- Turmeric x 2 tsp
- Dried mixed herbs x 2 tsp
- Ground black pepper to taste
- Salt x 1 – 3 pinches
- Olive oil x 1 tbsp
Method
- Peel and grate the carrot.
- Put the chicken mince into a large mixing bowl.
- In the small mixing bowl add the smoked paprika, mild or hot chili powder, ground cumin, ground coriander, garlic powder, onion powder, turmeric, dried mixed herbs, ground black pepper, salt and olive oil.
- Mix these ingredients together and add the mixture to the large mixing bowl along with the grated carrot.
- Put your hands under the tap and dampen them.
- Scrunch all of these ingredients together with your damp hands.
- Once all the ingredients are well mixed together split the mixture into two.
- Place one half of the meat between two sheets of grease proof paper and the other half between the other two sheets.
- Roll the pieces of meat between the sheets of paper as flatly and evenly as possible.
- When the meat is flattened roll the mixture and place them on a baking tray.
- Place in the fridge for 30 minutes or overnight.
- Preheat the oven to 180°C or gas mark 5.
- When the oven has preheated place the tray in.
- Bake the meat for 25 – 30 minutes or until the juices run clear.
- Once cooked remove from the oven and leave to rest for 5 minutes.
- Carefully unwrap the chicken and slice it strips.
- Place the chicken in a wrap or pitta.
- Serve with chips and salad or greens.
- Then enjoy.
