Serves 4 – 6

Equipment

  • Mixing bowl
  • Tablespoon
  • Stirring spoon
  • Sharp knife
  • Chopping board

Ingredients

  • Large Chicken x 1
  • Salt x 1 tsp
  • Black pepper to you tastes
  • Garlic granules x 2 tsp
  • Onion granules x 2 tsp
  • Smoked paprika x 2 tsp
  • Paprika x 2 tsp
  • Dried mixed herbs x 2 tsp
  • Dried rosemary x 2 tsp
  • Lemon x 1 juice and zest
  • Onion x 1
  • Olive oil

Method

  • In a mixing bowl add the salt, pepper, smoked paprika, paprika, dried mixed herbs, dried rosemary, juice and zest of the lemon and olive oil.
  • Mix these ingredients together until they are well mix in.
  • Set to one side.
  • Carefully slide your hands under the skin of the chicken all the way down the back.
  • Now pour in the mixture and spread over the breast of the chicken using your hands or a plastic brush
  • Spread and leftover mixture over the top of the chicken.
  • Peel and cut the onion into quarters.
  • Put the quarters inside the chicken.
  • Slice the lemon in half and put this inside the chicken too.
  • Place the chicken in the slow cooker pot.
  • Put the lid on on cook on high for 2 – 3 hours or low for 5 – 6 hours.
    • To test whether the chicken is cooked, put a skewer into the chicken and if the juices run clear it’s cooked.
    • If it’s not cooked, put the chicken back in for a further 5 minutes until it is done.
  • Once the chicken is cooked remove from the slow cooker.
  • Leave to sit and rest for at least 10 minutes.
  • Carve and serve with roasted potatoes and other vegetables of your choice.
  • Then enjoy.
