Biscuit Flapjacks

Today I’m going to be completely honest with you. The other day I was watching Jamie Oliver bake his son Buddy’s Biscuit Flapjacks on Facebook. It looked so good but it was sadly full of gluten and dairy. These are two ingredients which unfortunately don’t agree with me.

So I decided to bake my own version of this recipe. Sorry Mr Oliver for posting it to my blog. From what I have read on Jamie’s website he is not a fan of people ‘copying’ his work but I couldn’t let this one go. It looked too tasty for me to miss and I have used my own ingredients too. So it’s clearly my recipe now.

If he ever does read this post (ha, ha), I think he should forgive me as I’m gluten and dairy intolerant. Plus we love a good treat recipe in our house and this is one I’m pleased we did bake. So I just had to share it with you. If you’re like me or if you’re not, this is still a yummy treat the whole family can enjoy. Below is a video and recipe for you.

Makes 16 squares

Equipment needed

  • Sharp knife
  • Chopping board
  • Stirring spoon
  • Food processor
  • Mixing bowl
  • Spoon
  • Scales
  • Teaspoon
  • Square baking tray
  • Grease proof paper

Ingredients for the flapjack

  • Gluten free oats x 100g
  • Brown rice flour x 100g
  • Ground flax seed x 100g
  • Pumpkin seeds x 50g
  • Chia seeds x 50g
  • Pecans x 100g
  • Baking powder x 1 tsp
  • Coconut or brown sugar x 100g
  • Vegan butter, unsalted butter or ghee x 150g
  • Honey or Maple syrup x 100mls

Method for the flapjack

  • Preheat the oven to 180°C or gas mark 4.
  • Oil the base and the sides of the tin.
  • Line the baking tray with the grease proof paper.
  • Then oil the base and the sides of the grease proof paper.
  • Now weigh and measure all the ingredients.
  • Cut the pecans into small pieces.
  • In the food processor add the oats, ground flax seed, pumpkin seeds, chia seeds, chopped pecans, baking powder and coconut sugar.
  • Then add in the vegan butter, unsalted butter or ghee
  • Pulse all of these ingredients together until everything resembles breadcrumbs.
  • Pour the ingredients from the food processor into a mixing bowl.
  • Now pour over the honey or maple syrup and mix everything together.
  • Pour the mixture into the pre-lined baking tray and put in the oven for 25 – 30 mins or until golden brown.
  • Then remove and leave to cool completely.
  • Cut into squares, serve and enjoy.
Biscuit Flapjacks

Biscuit Flapjacks were very well received by my husband Howard. Although my son Ted was not the biggest fan. Normally I hide the healthy ingredients so he doesn’t know they are in there. So if you have a fussy eater please feel feel to grind the nuts and seeds before you add them to the flapjack. Remember though, shhh, don’t tell Jamie.
