
When pancake day is on the way it can be difficult to know what to cook. Yes I know that pancakes with lemon and sugar after your main meal is tradition but it’s knowing what to serve as a main for pancake day. Once upon a time we would eat up anything that was left in the pantry and then fast until April. Nowadays we no longer need to do this with food being shipped in from all round the world.
Therefore you could just stick to lemon and sugar pancakes after your main meal. As we have food on tap in todays world I felt it would be good to experiment. Pizza is always well received by my little family. As a pancake is flat like a pizza base I thought this would be good to make a pizza with. Normally we always use wraps as the base and then mozzarella, parma ham, tomato puree and basil as the topping. Again I felt like a change and I think I made the right choice. We love this pizza and we hope you will too.

Makes 4 – 6 pancakes
Equipment
- Large mixing bowl
- Whish
- Frying pan
- Spatula
- Cooling rack
- Tablespoon
- Knife
Ingredients
- Buckwheat flour x 120g
- Rice or tapioca flour x 65g
- Eggs x 2 large
- Milk x 200mls (of your choice)
- Salt x 1/2 tsp
- Oil for the pan
- Tomato puree x 4 – 6 tbsp
- Pesto x 4 – 6 tbsp
- Mozzarella x 1 large ball
- Olives x 20 – 30 sliced
- Tuna x 2 – 3 tins
Method
- Mix the flours together in the large mixing bowl.
- Crack the eggs into the bowl and pour in the milk.
- Whisk these ingredients together.
- Sprinkle in the salt.
- Leave in the fridge overnight.
- Put the frying pan onto a high heat on the hob and add oil to the base of the pan.
- Once the pan starts to smoke a little it should be hot so add in about a quarter or less of the mixture.
- When the pancake starts to cook around the outside it should be ready to flip.
- Leave the pancake to cook until turns golden brown on the other side too.
- You can lift the pancake with the spatula to check if it’s turned golden brown.
- Once the pancake has cooked remove it from the pan.
- Repeat the process for the rest of the mixture until you have used it all up.
- Slice the mozzarella and set aside.
- Put a pancake onto a baking tray.
- Spread over 1 tablespoons of the pesto and the tomato puree.
- Place the mozzarella over the top of the pancake.
- Open the tinned tuna and put as much as you want.
- Slice about 5 olives and put them on of the pizza.
- Repeat the process for the rest of the pancakes.
- Place under the grill and wait for the cheese to melt.
- Depending on how big your grill is you may need to grill these in batches.
- Once the cheese has melted serve with chips and salad or sides of your choice.
- Then enjoy.

Buckwheat Tuna and Olive Pizza Pancakes were a big hit and we loved them. My husband Howard and son Ted were a little unsure at first. Once they were on the table and being eating the uncertainty soon disappear. The best part is these pancake could be made in advance and frozen. Or you could make the batter the day before. The batter is really easy to make but there is a knack to cooking the pancakes. When you get the hang of it, it’s easy. However you decide to eat these pizza pancakes, as always, please enjoy.
