
My dear old Dad used to make this coulis every summer. It was always so yummy and we would eat it with ice cream with extra strawberries. My mum would grow strawberries on her allotment. Mum would always grow a large amount.
Therefore my dad would make the abundance of these berries into a tasty sauce. For me, strawberries are part of a great British summer and by making this coulis it brought back brilliant summer memories too. We ate the coulis with almond biscuits and a chocolate cashew nut sauce. (Recipe coming soon.) It was lush. We loved it and we hope you do too.

Equipment
- Small sharp knife
- Chopping board
- Saucepan
- Blender
- Jug or storing jar
Ingredients
- Strawberries x 300g
- Coconut sugar or a sugar of your choice x 1 tbsp
- Water x 50 – 80 mls
Method
- Wash the strawberries thoroughly.
- Hull the strawberries using the small knife.
- Cut them in half and put the halves in the saucepan.
- Sprinkle over the sugar.
- Pour over the water.
- Put the pan onto the hob and turn onto a high heat.
- Put the lid on and bring the pan to the boil.
- When the water starts to boil remove the lid and turn the heat down to a heat that lets the strawberries simmer.
- Leave to simmer for 5 – 10 minutes.
- Once the strawberries are soft remove from the heat and leave to cool.
- When the ingredients have cool pour them into the blender.
- Blend these ingredients together until they are smooth.
- Pour the coulis into the serving jug or bowl.
- Then serve with ice cream or any foods you fancy.
- Finally enjoy.

Strawberry Coulis was a delicious sauce. As I mentioned in the introduction we ate it with almond biscuits and a chocolate cashew nut cream. It was very easy to prepare and cook.
