Basil and Tomato Pinto Bean Burgers

Burgers and herbs are not two ingredients I would have thought to put together. We have been growing basil in the garden this year. There is so much of it but we are a little tried of pesto. Therefore I decided to try it in a vegan burger and it was so tasty. It gave the pinto beans a lot of extra flavour which I loved. It was so yummy that I had to share the recipe with you. Equipment

  • Bowl
  • Saucepan
  • Tablespoon
  • Food processor
  • Baking tray

Ingredients

  • Pinto beans x 300g
  • Tomato puree x 2 tbsps
  • Ground flax seed x 2 tbsps
  • Basil x 1 handful
  • Salt and pepper to taste

Method

  • Weigh and measure the pinto beans.
  • Soak them overnight in cold water in the fridge.
  • When you want to cook the pinto beans drain them through the colander and rinse.
  • Put them into a large saucepan and add enough water to cover them and about 2 inches more.
  • Add baking powder to the water and salt.
  • Next turn the hob onto high and bring to the boil.
  • Once boiling turn the heat down and reduce to a simmer.
  • Leave on the hob until the pinto beans are soft.
  • Depending on how old they are will depend on how long they take to soften.
  • The baking powder will help to soften them a bit faster.
  • When I cook pinto beans they do normally take around thirty to forty minutes to soften.
  • If you haven’t got the time then you can always use tinned instead.
  • Drain the pinto beans through the colander and leave to cool.
  • Once the beans are cool add them to the food processor.
  • Then add in the tomato puree. ground flax seed, basil and salt and pepper to taste.
  • Blend these ingredients together until they are smooth ish.
  • Remove the blade and divide the mixture into four equal parts.
  • Shape the four parts into burgers and put them onto a plate.
  • Put the plate into the fridge for a couple of hours.
  • Preheat the oven to 180°C or gas mark 5.
  • When the oven has preheated put the burgers onto a baking tray.
  • Place the tray into the oven for 12 – 15 minutes or until the burgers are golden brown.
  • Serve with chips and salad.
  • Then enjoy.
Tomato and Basil Pinto Bean Burger

Tomato and Basil Pinto Bean Burger were scrummy. I made these burgers for myself and I left one uncooked in the fridge overnight. The next day I ate the burger for lunch and it was so good. In fact I felt it tasted better. Therefore these burgers could be made the day before and stored in the fridge. Also you can freeze all of these ingredients. So you could make these at the weekend and freeze them for a quick meal during the week. However you decide to eat these burgers, as always, please enjoy. Thank you xxx
