Slow Cooker Spicy Beef Stew

The kids are back to school and I need easy dinners to help settle us all back into a routine. My slow cooker gets used all year round but it’s probably used the most at this time of year. It’s easy, quick to prepare food and touch wood, the cooker is reliable too. It can make tasty meals that don’t cost a lot either. This is one of those dishes. We loved it and we hope you enjoyed it too. Below is a video and recipe for you.

Equipment

  • Sharp knife
  • Chopping board
  • Slow cooker
  • Tablespoon
  • Teaspoon
  • Stirring spoon

Ingredients

  • Beef stewing steak x 500g
  • Leek x 1
  • Garlic x 2 cloves
  • Butternut squash x 1
  • Carrot x 1
  • Green beans x 2 handfuls (optional)
  • Bone broth x 600mls
  • Tamari or soy sauce x 2 tbsp
  • Mild, medium or hot chilli powder x 1 tsp
  • Ground ginger x 1 tsp
  • Ground sweet cinnamon x 1 tsp
  • Dried oregano x 1 tsp
  • Salt and pepper to taste

Method

  • Cut the top and bottom from the leek and slice it into half centimetre pieces.
  • Peel the garlic and slice it.
  • Next peel, slice and dice the carrot in half centimetre pieces.
  • Now peel the butternut squash and remove any seeds.
  • Then cut the butternut squash into half centimetre pieces.
  • Peel the potatoes and cut them into half centimetre pieces.
  • Put these ingredients into the slow cooker pot if you haven’t already done so.
  • Chop the stewing steak if not chopped already and put this into the slow cooker pot.
  • Add in the green beans at this point too.
  • Pour over the bone broth and add in the tamari or soy sauce.
  • Stir these ingredients together.
  • Sprinkle over the mild, medium or hot chilli powder, ground ginger, ground sweet cinnamon, oregano and salt and pepper to taste.
  • Put the lid on the pot and turn it on to high for 3 – 4 hours or low for 7 – 8 hours.
  • Before the end of the cooking process cook mash potato or rice.
  • Then serve and enjoy.

All the ingredients in this dish are freezable so you can freeze it. It’s so nice to know that I have another meal in the freezer ready to go when I need it.
