
My dear old Dad was ‘the king of roast dinners’ so my husband Howard and I, well mainly Howard, used to ask him a lot of questions. I remember Howard asking Dad how he made his roast potatoes so crispy. My Dad explained and ever since following my Dad’s advice we have had very crispy roast potatoes. In recent years I have been adding ingredients to make the potatoes tastier too. These roasties are the tastiest and crispiest potatoes you will ever eat. We love them and we hope you enjoy them too. Equipment
- Potato peeler
- Sharp knife
- Chopping board
- Colander
- Large Saucepan
- Fork
- Baking tray
Ingredients
- Potatoes
- Olive oil
- Rosemary x 2 large sprigs
- Garlic 4 – 8 cloves
Method
- Preheat the oven to 200°C or gas mark 6.
- Put the baking tray in while the oven preheats.
- Pour water into a large saucepan and bring the pan to the boil.
- Place the potatoes into the boiling water and turn the heat down to a medium heat if necessary.
- When the potatoes fall from the fork then they are ready to remove from the heat.
- After 5- 10 minutes drain the contents of the saucepan through the colander.
- Now toss the colander to rough the sides of the potatoes.
- Remove the baking tray from the oven.
- Now put the potatoes into the baking tray and drizzle over olive oil.
- Put the garlic and rosemary in as well.
- Toss the ingredients in the oil and put the tray back into the oven for 30 minutes or until golden brown and crispy.
- Once cooked, serve with the roast and enjoy.

The Tastiest Roast Potatoes were so yummy. This is the best way we have found to cook roast potatoes. By roughing the edges of the potatoes it makes the outside crispy and the inside of the potato is soft and fluffy from the par-boiling. Plus adding the rosemary and garlic give the potatoes extra flavour. Nothing beats a crispy, flavoursome roast potato with dinner. However you decide to eat these potatoes, as always, please enjoy.
