Slow Cooker Chinese Mince Beef

My son Ted, who is 10, has now joined a local football team. Ted loves football and I’m really happy for him. Every Wednesday evening and Saturday morning Ted train with his team mates. It means that on a Wednesday I need to get dinner on the table before Ted goes to practise. Therefore I have been trying out new recipes. I thought about make a stir fry the other night. Then I decided to cook a Chinese in my slow cooker. It was an easy dinner to prepare and cook. Plus it was really tasty too. We enjoyed this meal and we hope you will too. Equipment

  • Measuring jug
  • Teaspoon
  • Small stirring spoon
  • Sharp knife
  • Chopping board
  • Stirring spoon

Ingredients

  • Mince Beef x 500g
  • Spring onions x 1 bunch
  • Water chestnuts x 1 240g tin
  • Carrot x 1
  • Orange or red pepper x 1
  • Green beans x 1 handful
  • Bone broth x 300ml
  • Tamari x 1 tbsp
  • Apple cider vinegar x 1 tbsp
  • Coconut sugar or honey x 1 tbsp
  • Ground ginger x 1 tsp
  • Salt and pepper to taste

Method

  • Pour the bone broth into a measuring jug.
  • Add in the tamari, apple cider vinegar, coconut sugar or honey, ground ginger and salt and pepper to taste.
  • Cut the tops and the bottoms from the spring onions.
  • Then slice into 1/2 centimetre pieces.
  • Slice the top from the pepper and remove the core and the stalk.
  • Slice the flesh and set to one side.
  • Remove the lid from the water chestnuts and bamboo shoots.
  • Drain the water from the tin.
  • Put all of these ingredients and the green beans into the slow cooker pot.
  • Add in the mince beef and brake up the mince beef with the stirring spoon.
  • Pour over the bone broth while braking up the beef.
  • Turn the slow cooker onto high for 2 – 3 hours or low for 5 – 6 hours.
  • Towards the end of the cooking time boil the rice or quinoa.
  • Then serve and enjoy.
