BBQ Fish Stir Fry

Once upon a time we used to eat fish every Monday and Friday. This may seem very regimented to you but in the past it would help me to write a menu for the week. Nowadays I’m less about certain meals on definite days. I still try to include fish on our menu twice a week but they don’t have to be on a Monday or Friday anymore.

Instead I’ve turned my attention to cooking flavorsome dishes. It’s to try and encourage my son Ted’s love of fish. Which sadly seems to have left him. To be honest, it didn’t come back with this meal either. My husband Howard and I loved it though. That’s why I had to share it with you. Hopefully Ted’s love of fish hasn’t gone forever and it will return soon.

Equipment

  • Sharp knife
  • Chopping board
  • Frying pan
  • Small mixing bowl
  • Tablespoon
  • Teaspoon
  • Stirring spoon

Ingredients

  • Spring onions x 1 bunch
  • Bamboo shoots x 1 tin
  • Water chestnuts x 1 tin
  • Green beans x 2 handfuls
  • Basa or cod x 500g
  • Apple cider vinegar x 1 tbsp
  • Tamari x 2 tbsps
  • BBQ sauce x 2 tbsps
  • Salt and pepper to taste
  • Oregano x 1 tsp
  • Rice or noodles x 300g

Method

  • Slice the basa or cod into 1 inch pieces and set aside.
  • Remove the tops and the bottoms from the spring onions and slice into 1/2 centimetre pieces.
  • In the small mixing bowl add apple cider vinegar, tamari, BBQ sauce, salt and pepper and dried oregano.
  • Stir all of these ingredients together until smooth.
  • Put a large saucepan or wok onto a high heat on the hob.
  • Add oil to the base of the pan.
  • When the pan is hot add in the spring onions.
  • Fry until the start to soften.
  • Add in the water chestnuts, bamboo shoot and green beans fry for a further few minutes.
  • Next add in the fish and fry until it starts to flake away from itself.
  • Pour over the sauce and mix with the other ingredients until everything is coated.
  • Remove from the heat and leave the lid on the pan.
  • Cook the rice or noodles.
  • Finally serve and enjoy.
BBQ Fish Stir Fry

BBQ Fish Stir Fry was an easy meal to prepare and cook. It was a very simple dish that was super tasty too. You could make the sauce the day before and store it in the fridge overnight or in the freezer for a longer period. The dish, I think, needs to be eaten fresh. Therefore I wouldn’t make double of this dish and freeze it. Although it does make delicious leftovers the next day. However you decide to eat this dish, as always, please enjoy. Thank you. xxx
