Strawberry Soup

One of the fruits I associate with summer is strawberries. Nothing beats a beautiful British strawberry. We try to buy fresh strawberries in the summer but we buy them frozen in the winter. As I think of strawberries as a summer fruit I had never thought to make them into a warming soup before. We had a few packs in the fridge so I decided to make this fruit soup as a dessert the other night. It was very tasty so of course, I had to share the recipe with you.

Serves 1 – 2

Equipment

  • Blender
  • Cup
  • Saucepan
  • Stirring spoon
  • Serving bowl

Ingredients

  • Frozen strawberries x 1 – 2 large handfuls
  • Water or coconut water x 1 – 2 cups
  • Coconut sugar or honey x 1 – 2 tsps
  • Ground sweet cinnamon x 1/2 tsp
  • Coconut cream or cream x 2 tbsps

Method

  • Put the strawberries into the blender.
  • Add in the water or coconut water, coconut sugar or honey and ground sweet cinnamon.
  • Place the lid on the blender and blend these ingredients together.
  • Once smooth pour these ingredients into the small saucepan.
  • Place the pan on the hob and put onto a low heat.
  • Stir until warm through.
  • Pour the soup into a bowl and add the coconut cream or cream.
  • Then serve and enjoy.
Strawberry Soup

Strawberry Fruit Soup was a delicious way to enjoy strawberries in winter. It was very easy to prepare and cook. It could be made in advance of a meal and frozen. In the end I drank it like a strawberry tea from the bowl. Strawberries have a chemical compound in them that can help with digestive issues. The soup made a lovely sweet treat after my dinner but it would also make a very nice snack too. However you decide to drink/eat this soup, as always, please enjoy. Thank you. xxx
