
These Coconut and Lime Cookies are the combination of tropical coconut and zesty lime. Plus they have become a new favourite in our house. Soft, buttery, and packed with refreshing citrus flavour, they strike the perfect balance between sweet and tangy. Whether you’re baking for a special occasion, sharing with friends, or simply treating yourself, these delightful cookies are easy to make and impossible to resist. Makes 10 – 12
Equipment
- Mixing bowl
- Electric whisk or whisk
- Stirring spoon
- Zester
- Sharp knife
- Chopping board
- Teaspoon
- Tablespoon
- Grease proof paper
- Baking tray
- Cooling rack
Ingredients
- Oat flour x 130g
- Coconut flour x 35g
- Tapioca starch x 30g
- Baking powder x 1 tsp
- Bicarbonate of soda x 1/2 tsp
- Softened butter x 140g
- Egg x 2 plus 1 yolk
- Coconut sugar x 110g
- Limes zest x 2
- Lime juice x 2 tbsp
- Salt x 1 – 2 pinches
Method
- Pour the whole oats into the blender cup.
- Put the lid on and blend until a flour is formed.
- Take the butter from the fridge and leave it to soften.
- Once the butter is soft put it into the large mixing bowl.
- Next pour in the coconut sugar into the bowl.
- Add in the eggs and whisk these ingredients together.
- Now add in the oats, coconut flour, tapioca starch, baking powder, bicarbonate of soda and salt.
- Mix these ingredients together until a dough is formed.
- Zest the lime.
- Slice one of the limes in half and measure two tablespoons of juice from the lime.
- Add in the lime zest and juice and mix these ingredients in.
- Pre-line a baking tray.
- Dampen your hands under the tap.
- Scoop out a piece of the cookie batter, flatten it between your hands and place it onto a pre-lined baking tray.
- Continue until all of the mixture is used.
- Store in the fridge for 30 minutes.
- While the cookies are in the fridge preheat the oven to 200°C or gas mark 6.
- Once the oven has preheated remove the tray from the fridge.
- Put the baking tray into the oven.
- Bake for 10 – 12 minutes or until the cookies are golden brown.
- Leave to cool completely.
- Then serve and enjoy.
