The Last of the Summer Smoothies!

When I have fruit that has been around for a few days and looks as though it’s about to turn, I like to make up smoothies. Ted and I decided we would like to try banana, nectarine/peach and a few strawberries in coconut water. The result was yummy delicious. So we thought we would share it with you on this blog.

Coconut water is a clear liquid found in young coconuts which are about the size of  a football. Young coconuts are harvested at 5-7 months and contain the most water. As the coconut matures, the liquid turns into coconut meat. The best nutritional health benefits come from drinking the water of a young coconut.

Coconut water has been consumed for centuries in tropical countries and it is believed to heal a variety of ailments. In certain emergencies, coconut water has been used for IV hydration due to its electrolyte content and the fact that it is sterile if used directly from the inside of the coconut. People all over the world now enjoy coconut water.

Serves 2

Equipment needed

  • Chopping board
  • Sharp knife
  • Food processor or hand blender
  • Large jug
  • Large glasses


  • Coconut water x 500g
  • Banana x 1 meduim
  • Nectarine/peach x 1 large
  • Strawberries x 2 large handfuls


  • Start by measuring the coconut water into the jug
  • Next peel and chop the banana
  • Hull the strawberries and quarter
  • Chop the nectarine or peach and remove the stone and roughly cut into quarters.
  • (If you want to remove the skin from the nectarine then you can by placing them in boiled water that has been left for about 30 seconds. The skin should easily peel off.)
  • Add the fruit to the coconut water and blend until smooth.
  • Pour into two large glasses and enjoy.

The fruit and the coconut water worked really well in this smoothie. Personally I have never used fruit and coconut water this way before. However, it made a refreshing change from our normal almond milk or brown rice milk fruit smoothies. These are also coming soon to Ted and I were really pleased with our choice.
