My son Ted and husband Howard love a flapjack. It’s a big favourite snack in this house. I hadn’t made any for a little while when my lovely hubby started to ask for them again. So far I have only put one flapjack recipe on my blog. It’s called JamieJacks and it’s a delicious recipe. Therefore I thought it was about time I tried a new recipe and I thought I would look at the history of Flapjacks for inspiration.
For those of you who may not know, in the UK a flapjack is a baked bar that is cooked in a tin in the oven and then cut into rectangles. Most flapjacks are made from rolled oats, a a fat typically butter, brown sugar and usually golden syrup. The Oxford English Dictionary records the word ‘Flapjack’ as being used as early as the 16th century. Although at this time it seems to have been a flat tart. Shakespeare refers to flapjacks in Pericles, Prince of Tyre.
Also at this time, the word flapjack would be used to describe an apple flan which was similar. It was not until 1935 the word is used to describe a food made with oats. The word flapjack is now commonly used across the UK. As a flapjack has been around for centuries I decided to honor it by using old school ingredients like prunes and mixed fruit to flavour it. The results were fantastic, and as always, worth a try.
Makes 8 – 10
- Mixing bowl
- Stirring spoon
- Baking tray
- Grease proof paper
- Gluten free oats x 250g
- Baking powder x 1 tsp
- Cinnamon x 1 tsp (optional)
- Chia seeds x 50g (optional)
- Mixed fruit x 50g
- Raw cacao nibs x 60g
- Coconut oil x 175g
- Coconut sugar x 75g
- Maple syrup x 60g
- Dried prunes/plums x 100g
- Start by preheating the oven to 180°C.
- Line the baking tray with the grease proof paper.
- Now weigh and measure all the ingredients.
- In the mixing bowl add the oats, baking powder, cinnamon (optional), chia seeds (optional), mixed fruit and raw cacao nibs.
- Stir all these ingredients together until they are well mixed.
- If necessary remove the stones from the prunes and then roughly chop them.
- In the saucepan add the coconut oil, coconut sugar, maple syrup, dried prunes/plums.
- Put on the saucepan on a low heat and stir until the coconut oil has melted.
- Next pour the saucepan ingredients onto the oats and other ingredients.
- Mix together until all the ingredients are covered in the saucepan mixture.
- Pour the mixture into the pre lined baking tray and put in the oven for 25 – 30 mins or until golden brown.
- Then remove and leave to cool completely.
- Cut into squares, serve and enjoy.
Prune and Chocolate Chip Flapjacks were very well received when I served them to my little family. They gave this treat a massive thumbs up. The flapjacks are great to serve to your family and I thought they would also make a good present too. However, they are really delicious when there is no one home. You can sit and enjoy them with a nice cup of tea and your feet up for five minutes. However you decide to eat this treat, as always, enjoy!
