Oatmeal and Raisin Biscuits

One of my favourite breakfasts is a nice bowl of hot porridge but sadly it’s not one of my son’s. As oatmeal or porridge oats are full of health benefits I’m always trying to get my son, Ted to enjoy them. However, I know Ted is not the biggest fan and I’m not a fan of hearing him complain each time I serve a bowl of porridge for breakfast.

So I have started to try and find alternative ways to feed my son oats. I thought about making a biscuit instead and these Oatmeal and Raisin biscuits are great. Ted loves raisins so that was a bonus for him. Plus I asked him to help me make these yummy biscuits. He enjoys helping in the kitchen and he always wants to mix the ingredients. Biscuits are a great way to get kids involved in the kitchen.

Makes 10 – 20 biscuits

Oatmeal and Raisin Biscuits

Equipment

  • Large mixing bowls x 2
  • Teaspoon
  • Mixing spoon
  • Baking tray
  • Cooling rack

Ingredients

  • butter or ghee x 175g
  • Coconut or brown sugar x 150g
  • Egg x 1
  • Apple juice x 4 tbsp
  • Gluten Free oats x 200g
  • Ground almonds or brown rice flour x 150g
  • Raisins x 150g
  • Vanilla powder x 1/4
  • Ground cinnamon x 1 tsp
  • Bicarbonate x 1/2 tsp
  • Salt x 1 tsp

Method

  • Preheat the oven to 180° and grease a large baking tray.
  • Put the butter and sugar in a mixing bowl.
  • Beat these two ingredients together until light and fluffy.
  • In the other bowl, mix the oats, flour or ground almonds, vanilla and cinnamon, salt and bicarbonate of soda.
  • Next, gradually stir the oat mixture into the butter mixture until thoroughly combined.
  • Place well shaped tablespoons of the mixture onto the prepared baking tray.
  • Bake in the preheated oven for 15 minutes or until golden brown.
  • Remove from the oven and leave on the baking tray for at least 30 minutes.
    • They tend to fall apart very easily so it’s best to let them cool first.
  • After 30 minutes, remove from the baking tray and put on cooling rack.
  • Then serve and enjoy.

The Oatmeal and Raisin Biscuits were very well received in my house. Ted and Howard, my husband, really enjoyed eating them. They are a very simple biscuit to make with children and they cook quickly. These biscuits are delicious and would make a great present for a friend or family member. Plus they are great with a nice cup of tea so that’s always an added reward. However you decide to eat these biscuits, as always, enjoy.
