Chocolate Brandy Butter Biscuits/Cookies

Every Christmas my Dad would always make brandy butter sauce to accompany the pudding we would eat after our lunch. In the evening, after lunch was finished on Christmas day, my Dad would sit at the table with a glass of brandy. He would warm it slightly on the candles that were on the table.

Therefore brandy at Christmas is a must have in our house. The smell of it reminds me of my Dad in his quiet place at the table. These biscuits are a tribute to the man who made Christmas a success every year. Without Dad I don’t think we would have had a Christmas. My mum is not a great lover of this time of year but my Dad really enjoyed it. So thank you Dad and these biscuits are for you.

Equipment needed

Chocolate Brandy Butter Biscuits/Cookies
  • Blender
  • Mixing bowl
  • Scales
  • Mixing spoon
  • Saucepan
  • Tablespoon
  • Teaspoon
  • Chopping boards or trays x 2 – 3
  • Baking tray
  • Cooling rack


Dry Ingredients

  • Gluten free oats x 200g
  • Ground almonds x 100g
  • Raw cacao powder x 50g
  • Brown rice flour x 50g enough for dusting.
  • Coconut sugar or brown sugar x 100g
  • Baking powder x 1 tsp
  • Ground cinnamon x 1 tsp (Optional)

Wet Ingredients

  • Maple syrup x 100mls
  • Single cream x 150g
  • Unsalted butter x 150g
  • Brandy x 1 – 2 cap fulls


  • Start by grinding the oats in a blender until a fine powder is formed.
  • Now mix all the dry ingredients in the bowl.
  • Next put the rest of the ingredients into the saucepan.
  • Put on a medium heat and stir until they are combined.
  • It should take around 5 – 10 mins.
  • Once the ingredients are combined together, leave to cool.
  • Then finally add the wet ingredients to the dry ones.
  • Form a large ball and use your hands to do so if you need to.
  • If the dough is still dry and won’t stick, add a little milk.
  • Just add enough milk until the dough sticks together.
  • Spread the brown rice flour over the chopping board.
  • Roll out the dough to about a half centimetre thickness.
  • Use the cutter and make your biscuits.
  • Put them on trays or chopping boards and put them in the fridge for a good 30 minutes or so.
  • Preheat the oven to 180ºC or gas mark 4.
  • Place the biscuits onto baking tray.
  • Bake for around 12 – 15 minutes or until golden brown.
  • Finally place on a cooling rack and leave to cool.

Chocolate Brandy Butter Biscuits/Cookies are so scrummy. These would make a delicious present for a friend or family member. I think my Dad would have enjoyed these biscuits. Shame he’s not here to eat them. Oh well, we will have to eat the biscuits for Dad instead. They would also be good as an after dinner treat on Christmas day.
