Warm Roasted Chestnut and Ginger Smoothie

Since starting my blog six years ago I have learnt a lot about food and I continue to learn. That is one of my favourite parts of writing a blog is the learning. In the past few years I have been looking at Ayurvedic medicine. Ayurvedic medicine believes that food is medicine and medicine is food. For thousands of years Ayurvedic medicine has always used food to heal the body.

It’s not just food that helps to heal the soul but the way it’s cooked. Ayurveda says that in summer we should eat foods that are cooler especially when it’s very hot outside. Then in winter we should eat foods that are warmer. Most people think that smoothies are naturally cold but I have started to heat mine up as the weather is cold now. For the record they are just as delicious warm if not better. For me, this was a yummy way to heat me up for the cold winter day ahead.

Serves 1

Equipment

  • Blender
  • Tablespoon
  • Teaspoon
  • Saucepan
  • Stirring spoon
  • Bowl

Ingredients

  • Chestnut Puree x 2 tablespoons (see below for recipe if needed)
  • Ginger x 1 inch piece or 2 tsp of ground ginger
  • Banana
  • Raspberries or blueberries x 1 handful
  • Flaxseed x 1 tbsp
  • Chia seeds x 1 tbsp
  • Pumpkin seeds x 1 tbsp
  • Spinach x 1 handful
  • Ground sweet cinnamon x 1 tsp (optional)
  • Milk x 300mls (of your choice)

Method

  • Place the chestnut puree, ginger, banana, raspberries or blueberries, flaxseed, chia seeds, pumpkin seeds, spinach, ground sweet cinnamon and milk in the blender.
  • Blend all of these ingredients together.
  • Pour the contents into a saucepan and turn the heat onto high.
  • Stir the smoothie until it heats through.
  • Pour into a bowl and add extra seeds and fruit.
  • Serve and enjoy.

Ingredient for the chestnut puree

  • Chestnut x 250g
  • Milk of your choice x enough to blend it until smooth

Method

  • Preheat the oven to 200ºC or gas mark 5.
  • Put the chestnuts into the baking tray.
  • When the oven has preheated put the baking tray into the oven.
  • Roast the chestnut for about 25 – 30 minutes.
  • Remove for the oven and leave to cool.
  • Once the chestnuts are touchable place them into the blender.
  • Add enough milk to cover the chestnuts and blend.
  • You may need to add a bit more milk to make this puree smooth so add it a little at a time.
  • When the chestnuts are smooth remove from the blender and store in an air tight container until ready to use.
  • Any leftover can be stored in the freezer.

Warm Roasted Chestnut and Ginger Smoothie was a huge hit with me. The smoothie was creamy, rich and very warming. The best part about this smoothie is you can make it the night before and just simply heat it up before you want to eat it. Be careful though as chestnuts are like cashew nuts when soaked over night or heated up they tend to thicken the mixture they are in. Therefore this smoothie could become a very thick breakfast.
