As a busy mum I’m always looking for a quick, flavour-packed meal. This BBQ Mince Beef Noodles recipe combines smoky BBQ goodness with comforting noodles and has become a new favourite. Tender beef mince is coated in a rich, sticky BBQ sauce and tossed with perfectly cooked noodles for an easy weeknight dinner that’s both satisfying and delicious. With simple ingredients and minimal prep, it’s a fantastic recipe for busy days when you still want something homemade and full of flavour. Below is a video and recipe for you.

Equipment
- Sharp knife
- Chopping board
- Mixing bowl
- Tablespoon
- Large saucepan or wok
- Stirring spoon
Ingredients
- Mince Beef x 500g
- Spring onions x 8 – 10
- Garlic x 2 cloves
- Carrot x 1
- Red pepper x 1
- Green beans x 2 handfuls
- BBQ sauce x 2 tbsps
- Tamari or soy sauce x 2 tbsps
- Honey x 1 tbsp
- Chicken stock x 200mls
- Salt and pepper to taste
Method
- Cut the tops and the bottoms from the spring onions.
- Slice the onion into half centimetre pieces or as thinly as you can.
- Squash the garlic cloves under the blade of the knife and remove the skin.
- Now slice the cloves.
- Peel and slice the carrot into batons.
- Next slice the top from the red pepper.
- Remove the core and the stalk.
- Now slice the flesh of the pepper.
- Set these ingredients aside.
- In a small bowl add the BBQ sauce, tamari, honey and salt and pepper to taste.
- Stir these ingredients together.
- Put this to one side.
- Place a large pan on a high heat on the hob and add oil to the base.
- When the pan is hot add in the spring onions and fry until they start to soften.
- Once soft add in the garlic and fry for 30 seconds or so.
- Or until you can smell it and it starts to turn golden in colour.
- Next add in the carrots, red pepper and green beans.
- Fry these ingredients until they start to soften.
- Now add in the mince beef and fry until brown all over.
- Pour over the sauce and add in the stock.
- You may like to pour a little stock in the sauces mixing bowl to rid of any excess on the sides of the bowl.
- Turn the heat up and bring the ingredients to the boil.
- When it starts to boil turn the heat down and leave to simmer for 10 – 15 minutes.
- Meanwhile cook the noodles as per the packet instructions.
- When the noodles are cooked add them to the stir fry.
- Finally serve and enjoy.
