Coconut, Mango and Lime Cake

Ingredients

  • Unsalted butter x 150g
  • Coconut sugar x 150g
  • Eggs x 3 large
  • Almond flour x 180g
  • Coconut flour x 45g
  • Tapioca starch x 45g
  • Baking powder x 1 tsp
  • Bicarbonate of soda x 1/2 tsp
  • Limes x 2 zest and juice
  • Frozen mango x 100 – 200g thawed well drained and chopped into small pieces

Method

  • Remove the butter from the fridge and leave to soften.
  • When the butter is soft cream it with the sugar until it’s fluffy.
  • Next remove the yolks from the egg whites.
  • Place the yolks into the creamed butter and sugar.
  • Beat the eggs into the mixture.
  • Mixture the almond flour, coconut flour, tapioca starch, baking powder and bicarbonate of soda together.
  • Fold the dry ingredients into the butter mixture.
  • Stir in the lime zest and juice.
  • Set these ingredient aside.
  • Whisk the egg whites until they are fluffy and form stiff peaks.
    • You will be able to turn the bowl upside down and the egg whites won’t fall out.
  • Now fold the egg whites into the cake batter.
  • Set the cake batter aside.
  • Grease the baking tray or cake tin.
  • Scrunch a piece of grease proof paper between your hand and spread it across the base of the tray or tin.
  • Next grease the top of the paper.
  • Drain any juice from the mangoes and spread this across the base of the tin as evenly as possible.
  • Spread the cake mixture across the top of the mango being careful not to move it all to one side of the tin.
  • Put the cake in the fridge for 20 – 30 minutes.
  • Preheat the oven to 170°C or gas mark 4.
  • After 30 minutes remove the cake from the fridge and place it into the oven.
  • Bake for 40 – 50 minutes.
  • Once the cake is golden brown on top and you can put a skewer in and it comes out clean remove the cake form the oven.
  • Leave to cool completely
  • Slice and serve with ice cream or cream or just on it’s own.
  • Then enjoy.
