Salmon, Spring Onions and Seaweed

The sea is my favourite place to go when I need a break from the world and his dog. We love the sea and my son Ted and I love seafood. My husband Howard isn’t so keen. Therefore when I make a meal that is slightly different I’m always weary of Howard and even Ted’s reaction. Recently, we have been enjoying seaweed crisps so I decided to invest in a small packet of seaweed flakes. They do have a very distinctive smell of the sea but they are delicious in this burger. Thankfully Howard and Ted enjoyed this meal too. Below is a video and recipe for you.

Ingredients

  • Spring Onions x 1 bunch or 6 – 8
  • Salmon fillets x 4 fillets 125g
  • Almonds flour or breadcrumbs x 3 – 4 tbsps
  • Seaweed x 1 tsp
  • Egg x 1
  • Salt and pepper to taste

Method

  • Turn the salmon flesh side down onto the chopping board.
  • Put your hand on top of the salmon and carefully slice off the skin from all of the fillets.
  • Cut the salmon into chunky pieces and put into the food processor.
  • Sprinkle in the ground almonds and seaweed.
  • Crack the egg and add it to the food processor too.
  • Add salt and pepper to taste.
  • Blend all of these ingredients together.
  • Wet your hands under a tap.
  • With your hand divide the mixture into four equal parts.
  • Grab a part of the mixture and flatten between your hands until it forms a burger shape.
  • Put a dimple in the middle of the burger and place it on the plate.
  • Repeat the process until all the mixture is used.
  • Put the fish balls onto a plate and store in the fridge for a couple of hours.
  • Preheat the oven to 180°C or gas mark 4.
  • Grease a baking tray and place the salmon burger on it.
  • When the oven has preheated put the baking tray in and cook for about 12 – 15 minutes.
  • Once the fish starts to flake away from itself it’s cooked.
  • Remove the burgers from the oven.
  • Then serve with chips and salad and finally enjoy.

Salmon, Spring Onions and Seaweed Burgers was a huge hit in our house. The seaweed I brought wasn’t cheap but it does take a lot of it to flavour dishes. It gave this burger a slightly salty favour which complimented the salmon beautifully. These burgers were a great meal for dinner as I prepared them in the morning and then cooked them in the evening. It was simple but easy.
