Baked Cheese and Parma Ham Omelette

Omelettes are always an easy meal for me to prepare and cook. I love to cook but I don’t enjoy making complicated meals. In fact I think food should be simple and easy. It should also include lots of healthy vegetables. When making omelettes I know I can include a lot of veggies. My son Ted, who is nine, doesn’t really enjoy vegetables. Ted loves fruit but he isn’t a big veggies guy. Recently he has been asking to try broccoli so I thought I would include it in this omelette. It worked really well and Ted loved it too. Therefore I had to share the recipe with you.

Serves 4

Equipment

  • Sharp knife
  • Chopping board
  • Vegetable peeler
  • Grater
  • Frying pan
  • Large mixing bowl
  • Fork
  • Baking tray

Ingredients

  • Parma ham x 8 slice
  • Potatoes x 800g
  • Cheese x 80g
  • Eggs x 4 large
  • Spring onions x 8 or 1 bunch
  • Courgette x 1
  • Yellow pepper x 1
  • Broccoli x 1 small head
  • Dried mixed herbs x 1 tsp
  • Salt and pepper to taste
  • Oil for the baking tray and pan

Method

  • Preheat the oven to 180º or gas mark 4.
  • Start by peeling and chopping the potato into 1 centimetre cubes.
  • Put the potato cubes into the baking tray and drizzle oil over the top.
  • Toss the potatoes in the oil and put the baking tray into the oven for about 15 – 20 minutes.
  • Next cut the yellow pepper, remove the core and slice into strips.
  • Now peel the courgette and grate it.
  • Then finely slice the spring onions.
  • Cut the tops from the broccoli and slice into small pieces.
  • Crack the eggs into a bowl and mix with a fork.
  • Set to one side.
  • Heat the frying pan to a medium heat and add the olive oil.
  • Now add the spring onions to the pan and stir until it becomes soft.
  • It should take about 2 – 3 minutes.
  • Keep stirring the onion and add pepper, courgette and broccoli.
  • Stir the ingredients for another 3 – 5 minutes. (Or until everything is covered in the oil and softening.)
  • Add in the mixed dried herbs and fry for a further minute or so.
  • Sprinkle over salt and pepper to your taste.
  • Remove the tray from the oven and add in the ones from the frying pan.
  • Stir everything together and then pour over the egg.
  • Grate the mature cheddar and sprinkle over the top.
  • Put the baking tray back into the oven and cook the omelette for about 25 – 30 minutes or until golden brown.
  • Then serve with a salad and enjoy.

Baked Cheese and Parma Ham Omelette was a big hit with my little family. My husband Howard, son Ted and I love it. I was so surprised that Ted ate all the omelette I put on his plate. Finally I’m getting vegetables into his body! This is a great meal for all the seasons. Omelettes are great eaten hot or cold too. This one could be made in advance of a meal.
