Equipment
- Sharp knife
- Chopping board
- Vegetable grater
- Large saucepan
- Teaspoon
- Stirring spoon
- Saucepan
- Sieve
Ingredients
- Beef mince x 500g
- Onion x 1
- Carrot x 1
- Mild, medium or hot chilli powder x 1 tsp
- Smoked paprika x 1 tsp
- Garlic granules x 1 tsp
- Onion granules x 1 tsp
- Coriander x 1 handful chopped
- Spinach x 1 handful chopped
- Chicken stock or bone broth x 200mls
- Salt and pepper to taste
- Rice x 200g
- Taco shells x 8 – 12
- Guacamole or mashed avocado x 1
- Cheese or nutritional yeast
Method
- Peel, slice and dice the onion and set aside.
- Next peel the carrot and grate them.
- Place the large saucepan onto a high heat on the hob and add oil to the base.
- Add in the onions and fry until they start to soften.
- Once the onions have softened add in the carrots and fry for a 1 – 2 minutes.
- Wait for all the vegetables to soften.
- Now add in the beef mince and fry until they are golden brown.
- Next add in the mild chilli powder, smoked paprika, garlic granules, onion granules, dried mixed herbs and salt and pepper to taste.
- Fry for a further minute or so.
- Pour over the stock and bring to the boil.
- Sprinkle over the salt and pepper to taste.
- Then turn the heat down and leave to simmer.
- Meanwhile start to cook the rice.
- Start by measuring two centimetres on a wooden spoon.
- Measure your rice and pour it into the sieve.
- Wash the rice through twice under a tap.
- Put the washed rice into a saucepan.
- Flatten the rice down as much as possible until it’s all even spread across the base of the pan.
- Boil the kettle.
- Place the wooden soup on top of the rice.
- Now carefully pour over the boiling water until it’s level with the line on the spoon.
- The water should be 2 centimetres above the above the top of the rice.
- Next put the hob on to a high heat and bring the water to the boil.
- Put the lid on and once it boils turn the heat down to a low simmer.
- Leave to cook for 30 – 40 minutes.
- Do not remove the lid during the cooking process.
- When the water looks like it has been absorbed by the rice then lift the lid.
- Give the rice a stir and if there is still water in the bottom pop the lid back on for five more minutes.
- Continue to do this until all the water has evaporated.
- Remove the lid completely and give the rice a stir.
- Set aside for a few minutes.
- Now add in the chopped coriander and spinach into the base of the saucepan.
- Stir until it all wilts down.
- Prepare the main dish and add the rice to the bottom of the taco shells.
- Next add the southern spice beef on top.
- You can also add a little homemade guacamole or mashed avocado and cheese or nutritional yeast.
- Then serve with salad and finally enjoy.
