Generations of parents have often told their children to eat their carrots to help them see in the dark. My dear old Dad used to tell my brother Piers and I to eat our carrots. Dad would always say they would help us to see in the dark. He would usually ask Piers and I, ‘Have you ever seen a rabbit wearing glasses?’ To which we would reply in unison, ‘NO.’ ‘Exactly,’ he would continue, ‘that’s because they eat their carrots.’
Carrots are a great source of vitamin A as well as many other brilliant vitamins and minerals. Vitamin A helps eyesight and a lack of this vitamin could lead to blindness in children. So in a roundabout way, carrots can help you to see in the dark. There has to be a deficiency in the eye in the first place for your eyesight to improve. That doesn’t mean to say you should stop eating them. They are packed full of goodness and they are so tasty in this porridge recipe. Below is a video and recipe for you.

- Vegetable peeler
- Fine grater
- Sharp knife
- Chopping board
- Small saucepan
- Stirring spoon
- Carrot x 1
- Walnuts x 1 small handful
- Raisins x 1 small handful
- Porridge oats x 45g
- Ground flax seed x 2 tbsp
- Chia seeds x 1 tbsp
- Pumpkin seeds x 1 tbsp
- Blueberries or fruit of your choice x 1 handful
- Ground sweet cinnamon or ground cinnamon x 1 tsp
- Oat milk x enough to cover the oats
- Water x enough to break up the porridge in the morning
- Peel and grate the carrot and put this into the bowl
- Chop the walnuts into smaller pieces and put these into the bowl too.
- Now put the raisins, oats, ground flax seed, chia seeds,pumpkin seeds and ground sweet cinnamon or ground cinnamon into the bowl.
- Stir these ingredients together until everything is well mixed.
- Pour over the oat milk until all the ingredients are covered in the milk.
- Place in the fridge overnight.
- In the morning, remove the porridge from the fridge.
- Put a small pan on a high heat and add the porridge.
- Add the water to the pan.
- The porridge will probably come out of the bowl in one big lump.
- Next put a fruit of your choice into the saucepan.
- Break it up with the stirring spoon and add as much water as you need to break up the mixture.
- Turn the hob on to a medium heat.
- Stir the mixture continuously until it’s warm all the way through.
- You may need to add more water to the pan if it starts to become too thick for you.
- Once it’s at a consistency you like, remove from the heat and pour back into the bowl.
- Serve with honey or a topping of your choice and enjoy.
Carrot Cake Porridge was delicious and I thoroughly enjoyed eating it. My husband Howard and son Ted are not great fans of porridge. I think Howard finds it too filling in the morning and Ted just decided one day he didn’t like porridge anymore. Therefore, it was just me eating this warming bowl of porridge. For me, porridge is the perfect breakfast and this one was so tasty. It’s one breakfast I will definitely be having again and again and again.
