Aubergine and Pork Burgers

Aubergine and Pork aren’t two ingredients I would have normally put together. I had an odd aubergine in the fridge and minced pork in the freezer. Therefore I decided to put the these two delicious ingredient in a bowl and mix them up.

My husband Howard and son Ted are huge burger fans and I know that if I shout burgers for dinner they will be running for the table. Howard and Ted are also great fans of pork. Again I knew if I told them it was pork burgers for dinner there wouldn’t be any arguments. The burgers were a big success and it’s one of those meals we will definitely be eating again and again and again.

Equipment

  • Vegetable peeler
  • Sharp knife
  • Chopping board
  • Teaspoon
  • Baking tray
  • Blender
  • Mixing bowl
  • Tablespoon

Ingredients

  • Aubergine x 1
  • Mild, medium or hot chilli powder x 1 tsp
  • Smoked paprika x 1 tsp
  • Ground ginger x 1 tsp
  • Ground cinnamon x 1 tsp
  • Dried oregano x 1 tsp
  • Olive oil x 2 tbsp plus extra for blending the aubergine
  • Salt and
  • Ground almonds x 4 tbsp
  • Mince Pork x 500g

Method

  • Preheat the oven to 180° and add the baking tray in.
  • Chop the aubergine into cubes.
  • If the oven is preheated, remove the baking tray.
  • Add the aubergine to the baking tray.
  • Drizzle the olive oil over the aubergine.
  • Sprinkle over the mild, medium or hot chilli powder, smoked paprika, ground ginger, ground cinnamon and dried oregano.
  • Salt and pepper to taste.
  • Toss all the ingredients together.
  • Put the ingredients into the oven and cook for 25 – 30 minutes or until the aubergine start to turn golden brown.
  • Leave to cool.
  • Once the cooked aubergine has cooled add to the blender and pour in a little bit of olive oil.
  • Blend the aubergine and olive together.
  • Add in extra olive oil if needed.
  • Try not to make the aubergine to wet.
  • When the aubergine is smooth add in one – two large tablespoons of the mixture into the mixing bowl.
  • Put the mix pork in the bowl as well.
  • Now put the ground almonds into the mixing bowl.
  • Dampen your hands under the tap so the mixture doesn’t stick to your hands.
  • Using your damp hands scrunch all the ingredients together.
  • Once everything is well mixed together divide the mixture into four even parts.
  • Wash and dampen your hands again.
  • Now take a quarter of the mixture and flatten it.
  • Make it into a burger shape and make sure their is a dip in the middle of the burger.
  • The dip will hopefully stop if from rising when in the oven.
  • Put the burgers into the fridge for 4 – 6 hours.
  • Place the burgers onto a baking tray and put into the oven for about 25 – 30 minutes or until golden brown on the outside.
  • Serve with chips and salad.
  • Then enjoy.

Aubergine and Pork Burgers were a huge hit in our house. Howard and Ted really enjoyed these juicy and tasty burgers. They were very easy to prepare and cook. The aubergine acted like an egg when it was blended and added to the pork. These burgers could be made in advance of a meal and stored in the freezer.
