Crispy, golden masala hash browns are topped with a juicy homemade pork burger and a perfectly fried egg for a delicious combination of flavours and textures. It’s comforting, filling and packed with flavour!

Equipment for the Hash Browns

- Potato peeler
- Sharp knife
- Chopping board
- Frying pans x 2
- Tablespoon
- Teaspoon
Ingredients for the Hash Browns
- Onion x 1
- Potato x 800g
- Courgette x 1
- Ground masala x 1 – 2 tsp
- Egg x 1
- Olive or sunflower oil x 1 – 2 tbsp
Method for the Hash Browns
- Firstly peel, slice and dice an onion and set aside.
- Next peel and coarsely grate the potatoes and the courgette.
- Put the grated potato, courgette and sliced and diced onion onto a muslin cloth.
- Squeeze the excess juice from the cloth either over the skin or into a bowl.
- Once most of the juice has been squeeze out put the vegetables into the large mixing bowl.
- Add in the ground masala, egg and salt and pepper to taste
- Mix the spices in with the potato mix.
- Divide the mixture evenly into 4 – 8 parts.
- Grab a part and flatten the patty between your hands.
- Place it onto a plate and continue until you have used all of the mixture.
- Place in the fridge for at least a couple of hours or overnight.
- Meanwhile make the burgers
Equipment for the Pork Burgers
- Sharp knife
- Chopping board
- Frying pan
- Mixing bowl
- Taspoon
- Baking tray
Ingredients the Pork Burgers
- Pork mince x 1
- Ground flax seed x 4 tbsps
- Courgette x 1 small
- Garlic granules x 1 tsp
- Dried mixed herbs x 1 tsp
- Salt and pepper to taste
Method the Pork Burgers
- Put the pork mince into a large mixing bowl.
- Add in the onions, ground flax seed, garlic granules, dried mixed herbs and salt and pepper to taste.
- Dampen your hands under the tap and scrunch all of these ingredients together.
- Once everything is well mixed together divide the mixture into four even parts.
- Grab once of the quarters of that mixture.
- Now flatten the quarters and make sure their is a dip in the middle of the burger.
- It will hopefully stop if from rising when in the oven.
- Put the burgers onto a plate and place the plate in the fridge for at least a couple of hours or overnight.
- Preheat the oven to 180°C or gas mark 4.
- Place the burgers onto a baking tray and put into the oven for about 25 – 30 minutes or until golden brown on the outside.
- On a separate baking tray add the hash browns made earlier and cook for about 25 – 30 minutes.
- Turn both the burgers and the has browns half way through the cooking process.
- While those are cooking fry the eggs.
Equipment for the Fried Eggs
- Cast iron frying pan or skillet
- Table knife
- Fish slice
Ingredients for the Fried Eggs
- Eggs x 2
- Oil x enough to cover the base of the pan
Method for the Fried Eggs
- Crack the eggs into a bowl.
- Put the cast iron pan on a high heat on the hob.
- Pour the enough oil into the base of the pan and leave it to heat up.
- Once the pan starts smoking it will be hot enough.
- Pour in the eggs.
- They will start to cook on the bottom very quickly.
- Start to cut slits in the egg whites.
- You will notice the top of the whites cooking as well.
- Soon you will come to a point where you won’t be able to cut slits.
- Now leave the eggs to cook until the whites start to surround the yolks.
- The bottom of the eggs will hopefully be a lovely golden brown colour.
- Once the burgers and hash browns are cooked remove from the oven.
- Leave to sit and rest for 5 minutes.
- Then serve the hash brown with mango chutney (optional), a pork burger and a fried egg on top.
- Finally enjoy.
