- Plate
- Baking tray
Ingredients
- Tuna x 2 – 4 145g tins
- Sweetcorn x 1 150g tin
- Eggs x 2
- Gluten-free plain flour x 60g or almond flour x 50g and tapioca starch x 20g

- Garlic granules x 1 tsp
- Smoked paprika x 1 tsp
- Dried mixed herbs x 1 tsp
- Salt and pepper to taste

Method
- Open the tuna and sweetcorn and drain the excess water.
- Put the tuna and sweetcorn into a bowl and gently break up the tuna.
- Add the eggs, flour, onions granules, garlic granules, smoked paprika, dried mixed herbs, salt and pepper.
- Mix until everything is well combined.
- You want a thick, spoonable mixture rather than a runny batter.
- Add a splash of milk/water if it’s too dry or a little more flour if to dry.
- Split the mixture into 4 equal parts.
- Dampen your hands and divide the mixture into 4 – 8 equal parts.
- Grab a part and flatten it between your hands until it forms a burger or patty.
- Repeat the process for the rest of the fritters.
- Put the plate into the fridge for a couple of hours or overnight.
- When ready to cook preheat the oven to 200°C or gas mark 6.
- Oil the baking tray if necessary.
- Put the baking tray in at the same time.
- Once the oven has preheated remove the baking tray.
- Place the burger wraps on it and bake for 15 – 20 minutes or until golden brown, turning the fritters half was through the cooking process.
- Serve with chips and salad or veggies.
- Then enjoy.
