In January 2019 a lot of people gave up meat for the month. It was a hot topic on the radio and on the television. To me, it seemed to be the ‘new thing’ to do. So I thought if you were going to try this plan in the new year you might need a few recipes to help you get started.
Many people know that breakfast is the most important meal of the day. But lots of people are unsure of how to turn their breakfast vegan. The recipes below are all 100% Vegan and they are super delicious too. All of these breakfasts are great on the go foods too. So if you need a quick breakfast or breakfast for the office then these are it.

Vegan Seeded Sweet Potato and Quinoa Loaf is a great way to kick start your day. The loaf is soft and tastes just like a seeded loaf you would find in a supermarket. It’s delicious with slice or mashed avocado or you could eat it with jam or yeast extract too. Personally I love it with mashed avocado and fried kale to go. The bread is transferable and it could be taken with you in the morning.
Vegan Red Pepper, Sweet Potato and Chickpea Muffins is a delicious savoury breakfast that I love with sliced or mashed avocado and my homemade baked beans. It’s another breakfast you could eat at home or take with you on your way to work. These muffins are yummy hot or cold or sliced in half and toasted under the grill.
Prune and Lavender Porridge will give you a calm feeling first thing. I’m sure lots of people are in need of a calm feeling first thing. With all the rushing around we do nowadays it’s nice to be able to sit down and enjoy a calming breakfast. Lavender is normally associated with sleep but it’s actually very high in antioxidants that can help to slow down the aging process and make the body feel calmer. So a great breakfast to wake up too.
Vegan Sweet Potato Pancakes with Strawberry Cashew Nut Cream Cheese and Avocado is a sweet way to start the day. The breakfast is loaded with proteins and lots of healthy vitamins and minerals. It’s a great breakfast to make for a family but also one that could be made the night before and taken with you to work.
Quinoa Fruit Breakfast Bread is a deliciously fruity bread that is so yummy with yoghurt and honey or butter and jam. The bread can be baked the night before and taken with you in case you don’t have time to eat at home. Plus it’s also nice to put in the oven on a Sunday morning and enjoy it as a warm breakfast.
These are 5 of my favourite breakfasts that I’m sure you will enjoy. All of them can be eaten on the go or as a tasty family breakfast. Plus the ingredients in these dishes can be frozen too. So you could make up large batches and keep the leftovers in the freezer. Then all you have to do is defrost when you want to eat one of them. However you decide to eat these breakfasts as always enjoy. .
