So January has begun and I’m sure, after the Christmas leftovers have been eaten, many people will start to think about their healthy eating plan for 2020. (By the way, I’m not calling it a diet because that sounds too hard. Healthy eating plan sounds much easier to me.) Plus many more will probably either cut back on their meat intake or stop eating it altogether.
Therefore if you’re thinking about cutting out meat and don’t know where to start then look no further. I have lots of recipes on this blog but here are 5 of my favourites to help you along the way.

Vegan Mac and Cheese is a great way to still have your favourites during the week. It’s a very simple dish to cook and it’s so tasty. A creamy and surprisingly cheesy dinner. My family really enjoy eating this pasta dish. Plus it makes great leftovers too. It can be easily transported in a tupperware box or you can save a part of the sauce and heat the pasta the next day.

Vegan Tagine is a slow cooker meal that’s brilliant if you don’t have a lot of time during the day to cook. If you haven’t already, I would invest in a slow cooker. During the winter I tend to use my slow cooker more than the summer months. Slow cooking food takes all the stress out of having to think about cooking in the evening. What I like to do is prepare all the ingredients the night before and put them into the cooker. In the morning all I have to do is turn the slow cooker on and that’s it. Well apart from cooking the quinoa or rice, that’s it. It’s like the fairies come and cook your dinner.
Homemade Cheesy ‘No Cheese’ Baked Beans are a great complement to any meal. These beans can be made at the weekend in a large batch and frozen for an easy mid week dish. You can eat these with jacket potato or vegan sausages and chips. Nothing beats cheese and beans. Especially on a cold winters day. So a great dinner to eat during the winter months.

Easy Vegan Spanish Rice is another great dinner to feed a hungry family. I make this dish with vegan sausages I buy from the supermarket. There are so many to choose from in most supermarkets nowadays and they are all so tasty. However you don’t have to put vegan sausages in this dish. It could be cooked without. Plus this is not a dish I would recommend freezing. Rice should be eaten on the day of cooking or cold the next day. It does make delicious leftovers.

Three Bean Chilli is the final meal I found for your repertoire. It’s a warming dinner that’s first class. The dish is simple and easy to do. Again it’s a slow cooker meal or you can cook it on the hob. Either way it’s a healthy dish that will help you with your eating plan this January. Plus it’s full of warming flavours and I promise, no one will be missing the meat.
All of these dinners can be eaten as leftovers too. So why not make double and eat them as lunch the next day. It will save you so much time and money. They are all quick, simple and easy to do. Plus they are super tasty and I bet you don’t miss the meat. However you decide to eat these dinners, as always, please enjoy.
