
Whenever we eat a traditional Sunday lunch we will always have it with roast potatoes. In recent months, I have have been thinking about our roast dinner and how I would make different dishes to go with the meat. I knew that if I suggested changing from a traditional roast potato to a roasted sweet potato there would probably be objections from my little family.
That’s when I decided to invite my mum, or Nana as my son Ted calls her, to dinner. Nana, now that my dad Grandpa has passed, does not say no to a free meal. So I cooked white potatoes for my husband and son and sweet potato for Nana and I. Nana gladly ate my roasted sweet potato and thoroughly enjoy them too. In fact I think Nana prefers sweet potato to white potato. So I decided to share this recipe with you. Just in case you fancy a change too.
Serves 4

Equipment
- Potato peeler
- Sharp knife
- Chopping board
- Large Saucepan
- Baking tray
Ingredients
- Sweet potatoes x 500g
- Marias Piper potatoes x 500g
- Olive oil
- Garlic granules x 2 – 4 tsps
Method
- The oven will be preheated to 180°C from cooking the meat.
- So while the meat is cooking, peel and cut the potatoes into 2 inch pieces.
- Remove the baking tray with the meat in from the oven, leaving the oven on.
- Carefully remove the meat from the baking tray and leave to rest on a board.
- As well as the meat remove any other contents from the baking tray.
- These contents, like the onion and garlic could be used in helping to flavour the gravy.
- Now put the potatoes into the baking tray and drizzle over olive oil.
- Sprinkle over the garlic granules.
- Toss the potatoes in the oil and granules in the tray.
- Put this back into the oven for 30 minutes or until golden brown and crispy.
- Once cooked, serve with the roast and enjoy.

Garlic Infused Roasted Sweet Roast Potatoes were greatly received by Nana. She told me they were delicious.
