Vegan Potato Bits with Homemade Baked Beans

Potatoes! Yes, we love a Maris Piper or King Edward. We enjoy making chips, mash and jacket potatoes from this vegetable. Although I had never thought of making potato bits from them. My son Ted has chicken nuggets at school occasionally. Ted will often ask if we can have them at home.

To be honest, I’m not a fan of shop brought ones and prefer making my own. Plus during the week I try to make vegan or vegetarian meals. So this it a combination of a chicken nugget made from potatoes. We served these with my homemade baked beans and I don’t think anyone missed the meat in this meal.

Vegan Potato Bits with Homemade Baked Beans

Serves 4

Equipment

  • Sharp knife
  • Potato Peeler
  • Sharp knife
  • Chopping board
  • Teaspoon
  • Saucepan
  • Frying pan
  • Plastic brush
  • Baking Tray

Ingredients

  • Potatoes x 600 – 800 (Maris Pipers of King Edwards are best)
  • Spring onions x 6 – 8
  • Red pepper
  • Carrots
  • Brown rice flour or plain flour x 100g
  • Ground flax seed x 150g
  • Dried mixed herbs x 1 tsp
  • Oil
  • Salt and pepper to taste

Method

  • Preheat the oven to 180°C or gas mark 4.
  • Peel the potatoes and cut them into 1 inch pieces.
  • Next peel the carrots and cut them into 1 centimetre slices.
  • Put a saucepan of water onto the hob and bring it to the boil.
  • Add in the carrots and boil for 5 minutes.
  • Now add in the potatoes and boil for only five mintues.
  • Meanwhile cut the spring onions into 1/2 centimetre piece.
  • Then cut the top from the pepper and remove the core.
  • Slice the pepper and then chop it into 1 centrimetre pieces.
  • Put the frying pan onto a high heat and add oil to the base of the pan.
  • Spread the oil evenly across the base of the pan with a plastic brush.
  • Once the pan is hot fry the spring onion and red pepper until they start to soften.
  • Once the are soft set aside.
  • After 5 minutes the potatoes need to be able to fall from a knife easily but no a fork.
  • They still need to be slightly hard to make the potato bits.
  • Once the fall from a knife remove from the hob and drain through the colander.
  • Put the contents of the colander back into the saucepan.
  • Add in the pepper and spring onion and mash these ingredients together.
  • If it’s hard to mash add a little olive oil to the potatoes to loosen them.
  • Sprinkle in the brown rice flour and the dried mixed herbs and continue to mash.
  • Add salt and pepper to your taste.
  • Once the potato is smooth scoop a spoonful from the saucepan.
  • Roll it in the flax seed and put it into the baking tray.
  • Continue this process until all of the potato mixture has been used.
  • You may need more ground flax seed or less depending on how you like your bits.
  • Put the potato bits into the oven and cook for about 25 – 30 minutes or until golden brown.
  • Serve with homemade baked beans and enjoy.

Vegan Potato Bits is a great family meal that everyone can enjoy. My husband Howard and son Ted really enjoyed eating this meal. It would be a good one for warmer days. You could also serve the potato bits with salad and sausages if you are missing the meat. However you decide to eat this meal, as always, enjoy. xxx
