Slow Cooked Coconut Pork Curry

Curry is a dish that originates for Indian and South Asia. Traditionally curries are made with a sauces that is seasoned with a variety of spices. The is also a wide variety of curries as well. In Indian the variety of spices used to make a sauce would depend on the region or even religion. Outside of Indian in Southeast Asia many of the dishes are made with coconut cream and spices.

As my son Ted, who is 8 nearly nine, is not the biggest fan of spice I generally tend to opt for creamier curries. I find the coconut cream helps to make the curry slightly mild. Personally I think these curries are a great way to introduce children to spices. Spices are packed with antioxidants and anti-inflammatories. These are brilliant to give to a growing and developing immune system. Plus Ted doesn’t mind a few spices every so often.

Equipment

  • Sharp knife
  • Chopping board
  • Vegetable peeler
  • Teaspoon
  • Stirring spoon
  • Slow cooker

Ingredients

  • Diced pork x 500g
  • Leek x 1
  • Carrot x 1 large
  • Butternut squash x 200g
  • Green beans x 1 handful
  • Bone broth or chicken stock x 200mls
  • Coconut cream x 200mls
  • Bay leaves x 2
  • Mild, medium or hot curry powder x 2 tsp
  • Ground sweet cinnamon x 1 tsp
  • Dried oregano x 1 tsp
  • Salt and pepper to taste

Method

  • Dice the pork if not already diced and put the pieces into the slow cooker pot.
  • Remove the top and bottom from the leek and thinly slice it.
  • Peel the butternut squash, remove the seeds if necessary and cut into 2 centimetre pieces.
  • Now peel the carrot and slice it lengthways.
  • Then cut it into half centimetre pieces.
  • Put all of these ingredients into the slow cooker pot.
  • Add in the green beans, bone broth or chicken stock, coconut cream, bay leaves, mild medium or hot curry powder. ground sweet cinnamon and dried oregano.
  • Sprinkle over salt and pepper to you tastes.
  • Stir all the ingredients in the slow cooker pot.
  • Turn the cooker onto high for 3 – 4 hours or low for 7 – 8 hours.
  • Before the end of the cooking time, cook the rice as per the packet instructions.
  • Finally serve and enjoy.

Slow Cooked Coconut Pork Curry was a hit in our house. We all enjoyed this meal and it was a very easy dinner to cook. The slow cooker is used a lot in my kitchen. I love to use it in winter but it also gets a lot of use in summer too. The best part is you can make a huge meal and freeze any leftovers.
