
My husband Howard loves gingernuts. As it’s almost Valentine’s day I have decided to bake him a batch. We don’t really celebrate Valentines day but this year I thought it would be nice to bake him a favourite sweet treat.
Occasionally I like to bake biscuits/cookies for my family. In recent months I have been using the food processor to make biscuit/cookie dough. I decided to make this batch with the processor and they turned out really well. We loved these biscuits/cookies and we hope you and yours will too. Below is a video and recipe for you.

Makes 24 biscuit
Equipment needed
- Food processor
- Tablespoon
- Teaspoon
- Chopping boards x 2
- Rolling pin
- Heart shaped cookie cutter or a cutter of your choice
- Baking trays x 2
- Cooling rack
Ingredients
Dry Ingredients
- Ground almonds x 200g
- Brown rice flour x 200g, plus extra for dusting.
- Baking powder x 1 tsp
- Ground ginger x 2 tbsp
- Ground sweet cinnamon x 1 teaspoon
- Salt x 1 big pinch
Wet Ingredients
- Maple syrup x 150mls
- Almond butter x 150 g
- Coconut oil x 100g
Method
- Place the almond butter, coconut oil and maple syrup into the blender cup.
- Blend these ingredients together.
- Now add in the almond flour, rice flour, baking powder, ground ginger, ground sweet cinnamon and salt.
- Blend these ingredients until the a crumbly dough ball forms.
- Take the blade out of the cup.
- Use the extra rice flour and spread in over the chopping board.
- Remove a piece of the dough ball from the blender and put on the the chopping board.
- Roll out the dough to about a half centimetre thickness.
- Use a cookie cutter of your choice and make your biscuits.
- Place the cut cookie onto the spare chopping board.
- Repeat this process until all of the dough has been used.
- Put the chopping board into the fridge for about 30 minutes.
- Preheat the oven to 180°C and put the baking trays in as the oven preheats.
- Remember to grease the trays if necessary.
- Once the oven has preheated remove the chopping boards from the fridge and the baking trays from the oven.
- Place the biscuits/cookies onto the baking trays.
- Put the tray into the oven for around 10 – 12 minutes or until golden brown.
- Finally place on a cooling rack and leave to cool.
- Then serve and enjoy.

Blender Gingernuts were a huge hit in our house. My husband, son and I thought these biscuits /cookies were so tasty. They would make a great as a gift for friends or just for you with a cup of tea.
