
Nothing beats a comforting, homemade meal! This Oven Baked Potato Beef Chili is the perfect combination of rich, hearty flavours and simple ingredients. It’s cooked in the oven to develop a deep, delicious taste, this satisfying dish is ideal for cosy family dinners, meal prep, or warming up on a chilly day. If you’re looking for a filling recipe that’s easy to make and packed with flavour, this one is sure to become a favourite.
Ingredients
- Beef mince x 500g
- Onion x 1
- Garlic x 2 cloves
- Carrot x 1
- Potatoes x 800g
- Olive oil x 4 tbsps
- Hot or mild chili x 1 tsp
- Smoked paprika x 1 tsp
- Paprika x 1 tsp
- Cayenne pepper x 1/4 – 1 tsp (depending on how hot you like it)
- Dried oregano x 1 tsp
- Chicken stock x 3oomls
- Coriander x 1 handful
- Salt and pepper to taste
Method
- Preheat the oven to 200°C or gas mark 6.
- Peel and chop the potatoes into bite size pieces.
- Put a large pan of cold water on the hob.
- Add in the potatoes and a pinch or two of salt.
- Turn the hob onto high and bring the pan to the boil.
- Once the pan is boil turn the heat down and leave to simmer for 5 – 10 minutes.
- When the potatoes fall from a fork easily they are done.
- Pour the potatoes through the colander over the sink.
- Leave to cool.
- When the oven has preheated pour 3 tbsps of oil into a baking tray.
- Place the potatoes in the baking tray.
- Toss the oil and the potatoes together until they are covered in the oil.
- Place the tray in the oven and cook for 10 – 15 minutes.
- While the potatoes are in the oven, peel, slice and dice the onion.
- Squash the garlic under the blade of the knife, remove the skin and slice the cloves.
- Peel and grate the carrot and set these ingredients aside.
- Put a large pan onto a high heat on the hob and add oil to the base.
- Once the pan is hot add in the onions and fry until they start to soften.
- Next add in the garlic and fry for about 30 seconds or so.
- Just until you can start to smell the garlic and it turns golden brown.
- Add in the grated carrot and fry for a minute or so.
- Now add in the mince beef and fry until it browns.
- Once it’s brown add in the hot or mild chili powder, smoked paprika, paprika, cayenne pepper, dried oregano, tamari, tomato puree and chicken stock.
- Next add salt and pepper to taste.
- Bring these ingredients to the boil and turn the heat down and leave to simmer.
- Once the potatoes have started to brown slightly remove from the oven.
- Remove the chili mixture from the hob and add to the potatoes.
- Put the tray back into the oven for 25 – 30 minutes of until the potatoes have turned golden brown.
- Once they are golden remove from the oven and serve with a green of your choice.
- Finally enjoy.
